The Best Edamame Hummus

I am obsessed with this recipe. My family calls it THE BEST hummus recipe in general. it is a healthy, delicious and clean recipe and I cannot wait for you all to make this terrific appetizer & snack.

Equipment

Ingredients

  • 2/3 cup frozen shelled edamame
  • 1/4 cup drained canned chick peas Garbanzo beans
  • 1/3 cup grape seed oil or light olive oil
  • 2 tbsp lemon juice about 1 lemon
  • 1 1/2 tsp sesame tahini
  • 3/4 tsp kosher salt
  • 1/2 tsp granulated monk fruit sweetener or granulated cane sugar
  • 1/4 tsp onion powder

Instructions

  • Add 2/3 cup of frozen shelled edamame to a microwave safe container with 2 tbsp water. Microwave for 3 1/2 minutes giving it a few stirs. Then rinse in cold water and set aside.
  • Then you will drain and rinse your chick peas as well and set aside
  • Then in your high power food processor add your edamame, chick peas, grape seed oil, lemon juice, tahini, salt, onion powder & sweetener.
  • Puree on high for 1 minute. Then take spatula, scrape down the sides and then puree for another minute
  • Pour into serving bowl of choice and then top with toasted pine nuts, red pepper flakes, feta & more edamame and dig in!
  • Then store in an air tight container for 5 to 7 days in the fridge!
