No Bake Chocolate Peanut Butter Oatmeal Energy Bites

They are so simple, so filling, great source of protein & perfect even for that bite after a great workout. I also sneak a little bit of a vegetable serving, because lets face it.. my kid is getting harder to trick!

Ingredients

  • 1 cup quick oats
  • 1 cup creamy peanut butter or nut butter of choice only ingredients should be peanuts
  • 3 tbsp maple syrup
  • 1/2 tsp salt
  • 1/4 cup chopped chocolate chunks Enjoy Life
  • 2 tbsp Vital Proteins collagen
  • 1 medium carrot grated on large grate setting

Instructions

  • In a large mixing bowl add in 1 cup peanut butter & maple syrup, stir to incorporate. Then add in oats, salt, chopped chocolate, collagen, salt & grated carrots. Fold with a spatula until fully incorporated
  • Place parchment paper on tray & roll out about 1 tbsp of "dough" for each bite, continue until the "dough" is gone. Then place in freezer for at least 30 minutes. Then transfer to a sealed container & keep in the freezer... in an easy access location :)
