Kodiak Cakes saves me time & time again. Their Almond Poppy Seed Power Cakes mix, makes this recipe so simple, and requiring only 7 ingredients! As you guys know one thing I am always weary about when I get pre made mixes is what additives they have in it to preserve freshness. Did they use bleached flour? Did they use enriched flour? The list goes on & on. However with Kodiak Cakes I have ZERO worry, they use 100% whole grain
1cupcane sugar1/4 cup for crust, 3/4 cup for lemon filling
1tspvanilla extract
1stick unsalted butter
3eggs
Pinchof salt
Instructions
In food processor add 1 cup flour, 1/4 cup sugar & 1 stick of unsalted butter cut into 10 slices. Then process until it starts to form a ball of dough in the food processor— it should start coming together after about 2 minutes
Then in the greased baking dish add in the dough, press down firmly until the base layer is covering the bottom of the dish evenly. Then place in oven at 350 degrees for 20 minutes.
While the base layer is cooking. Zest the 2 lemons & then chop the zest cup, set aside in small bowl. Then juice the 2 lemons ( about 1/3 cup lemon juice).
In medium bowl add in lemon juice, 3 eggs, vanilla extract, 3/4 cup sugar, 1/4 cup flour, lemon zest & pinch of salt. Whisk until fully incorporated. You don’t want any of the eggs to not be well mixed, because we don’twant an eggy mixture to rise to the top. Then let sit for 5 minutes.
Once base layer is done, place on stove top. Then give your lemon filling another whisk & then pour on top of base layer. Then cook in oven at 350 degrees for another 20 minutes.
At minute 20 the top will start to look golden brown, bubbly with lemon filling & sugar having crystalized at the top & filling in the middle.
Let cool for 10 minutes, cut & serve! Dust powdered sugar on top if desired! (( our stores have been out or I would have on mine!
