Healthy Kale, Brussel Sprout and Cranberry Salad

This was one of my all time favorite Whole Foods salads that I use to get for years when I went grocery shopping with my mom. I was craving it the other day, and thought lets create our own HGHF. Ingredients

Easy Mustard Vinaigrette

  • 8 tbsp of light olive oil
  • 4 tsp dijon mustard
  • 2 tsp honey
  • juice of 2 lemons
  • 2 small cloves garlic minced
  • 1/4 cup diced shallots
  • salt & pepper to taste start with 1/2 tsp salt & 1/4 tsp pepper

Healthy Kale, Brussel Sprout and Cranberry Salad

  • 5 cups of tightly packed Curly Kale chopped into bite sized pieces about 1 head of curly Kale
  • 10 Brussel Sprouts
  • 1 cup shredded Parmesan cheese
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup sliced almonds

Instructions

Easy Mustard Vinaigrette

  • Add the above ingredients to immersion blender safe container & blend until fully incorporated/creamy.

Healthy Kale, Brussel Sprout and Cranberry Salad

  • Chop your curly kale into bite sizes pieces ( 1 head curly kale, about 5 cups tightly packed) and add to large mixing bowl
  • Then chop your Brussel sprouts into thin rounds and then some you can shred with your knife as well. Depends what kind of bite sized pieces you prefer. Next you will add those to the bowl
  • After pour your dried cranberries, sliced almonds & parmesan cheese on top
  • Next take 2 big mixing spoons and toss the dried ingredients. Then you will pour your homemade Mustard Vinaigrette over it and mix it throughly
  • Cover and refrigerate overnight. That is KEY. You must refrigerate over night. It will taste good, but not FANTASTIC until you let the flavors meld over night, the kale soften by the dressing. All the flavors need to meld, trust me, you will be beyond glad you did!
  • Then serve!!
