Easy Pizza Quesadilla
This recipe is OH SO simple & a great way to get that pizza fix in quick. I also did a quick tutorial on Instagram stories ( @honestfoodie_blog) & saved it to high lights to check out. Enjoy!

- 2 large tortillas
- 1-1 1/2 cups cheese use a mixture of whatever you have on hand! Here I used 1/2 Mozzarella & 1/2 Monterey Jack Cheddar mix
- 2 tsp pizza seasoning linked my favorite here
- 1/4 cup pizza sauce
- 1 tbsp olive oil or olive oil spray
Then Toppings of your choice:
- What is pictured 8-10 pepperonis, 2 tbsp chopped black olives & 2 baby bella mushrooms sliced!
Turn on stove at medium heat, give your large frying pan a spray with avocado oil/olive oil or 1/2 tbsp olive, let heat for 1-2 minutes. Then sprinkle on 1 tsp of the pizza seasoning, BEFORE you even put the tortilla on-- this is HUGE, adds that big pop of flavor flav! It will have the seasoning cook into your tortilla. Then layer on your first tortilla.
Next pour on your pizza sauce & spread out evenly over the tortilla. Sprinkle over half of the cheese, the toppings you are wanting to add-- like I mentioned above like mushrooms, pepperonis, black olives-- then the rest of the cheese.
Layer on the second tortilla. Then spray the top, sprinkle the last of the pizza seasoning. Let it cook on that first side until it starts to crispy about 5-8 minutes, then flip. Cook again until nice & crispy on the other side. Then let cool for 1-2 minutes, then slice & enjoy!!
