THE BEST FUNFETTI MUG CAKE

Who else has always been obsessed with Funfetti Cake since they were little? Um. I have! That is why I knew I needed to create a healthy, easy and delicious Funfetti Mug Cake.

INGREDIENTS:

– Oat flour – All purpose flour – Baking powder – Vanilla extract – Almond extract – Karuna whole plant smoothie – Butter – Coconut sugar – Egg – Strawberries – Funfetti

It took about 10 tries to get it just perfect and this birthday mug cake took about 12! SO so so worth it. My goodness it is good. 

Instructions:

In mug or ramekin add in egg, and whisk until it is FULLY whisked. Then add in the vanilla extract, almond extract, Karuna, melted butter and whisk until fully incorporated.

Then in separate bowl add in your oat flour, all purpose flower, salt, coconut sugar and baking power. Whisk until incorporated.

Add in the dry ingredients to your wet and mix until incorporated. Then add in your chopped strawberries, funfetti or birthday cake cookie broken up and rainbow sprinkles. Fold until mixed in.

Place in microwave for 1 minutes and 30 seconds. Then check to see if it looks like the consistency below. You want to microwave it until the sides start coming off the sides of the mug or ramekin.
