THE BEST CHICKEN SALSA BAKE

One of my favorite go-to easy dinners requires minimal ingredients, pantry staples, and items that are budget-friendly! It makes for a great, healthy, and easy family favorite during the week.

INGREDIENTS:

– Pinto beans – Chicken – Taco seasoning – Cheese – Black bean corn salsa

Take the two large chicken breasts & cut them into 1/4 pieces about 2 inches in length. I lay the breast down & cut vertically along the short slide, not long ways.

Instructions:

Then pour the refried beans into the dish & smooth flat with a spatula.

Then sprinkle 1/2 cup of cheese over the refried beans. Then pour the hatch chiles (not drained) over the cheese, smoothing over with a spatula again.

Next, pour 1/2 cup salsa & smooth over. Pour the chicken on top & spread it evenly over the top. Pour 1/2 cup more of the salsa on top, then sprinkle 1/2 cup more of cheese on top.

Place in the oven at 375 degrees for 18 minutes. Take it out & sprinkle the rest of the 1/2 cup of cheese on top. Then place back in oven for 10 more minutes, then turn on broil HIGH for 5 minutes.
