SIMPLE HIGH PROTEIN CHEDDAR CORN FRITTERS

I am very, very obsessed with these high-protein Protein Cheddar Corn Fritters. I made them so many times to make sure the seasons were just right and the texture wasn’t too dry or too wet.

INGREDIENTS:

– Kodiak cake power flour – Cheddar – Sweet corn – Egg – Milk – Oil – Chives – Baking powder – Garlic powder – Cayenne powder

Get ready for a delicious, healthy side, breakfast, lunch, or whenever you want to have it!

Instructions:

In a large mixing bowl, sift your Kodiak Cake Power Flour, then add in the rest of your dry ingredients: baking powder, salt, garlic powder, cayenne pepper, onion powder, shredded cheddar, and chives.

Pour in your milk, oil, and egg. Take your mixing spatula & fold until fully incorporated, but do not over mix, just once all the mixture is “wet".

Next fold in your corn & set aside.

Heat 2 tbsp oil in your frying pan over medium heat. Cook each side for 3 to 4 minutes; each side will be crispy brown.
