Then pour in lemon juice, maple syrup, cashew butter, vanilla extract & almond extract over the dry ingredients. fold with a spatula until full combined & let sit for 2-3 minutes.
Now take about 1 1/2 tbsp of the batter, roll in hand to create the energy bites. Then roll in the coconut zest, place on baking sheet & repeat for all 8.
