HEALTHY WINTER POMEGRANATE DELICATA SALAD

In this story I share one of my favorite winter salads, Healthy Winter Pomegranate Delicata Salad. It has one of my favorite seasonal dressings that is easy, clean and perfect for this time of year!

INGREDIENTS:

Delicata squash – Garlic ghee – Spinach – Pecans – Heart of palm – Goat cheese – Pomegranate seeds

This recipe is absolutely perfect for the holidays. Not only is delicious, but the presentation is stunning and the vibrant color of the pomegrante vineagrette just screams the holiday!

Instructions:

Pomegranate Vinaigrette In immersion blender add in Pomegranate seeds, oil, maple syrup, Balsamic, Dijon, salt and pepper. Immersion blend until smooth.

Grilling the Delicata Slice the delicata squash into 1/2 inch rings as see in picture. Brush with melted garlic ghee, salt and pepper. Grill on each side for 5 minutes at medium heat.

If it is too cold to grill. On frying pan spray with olive oil and brush both sides of delicata with garlic ghee, salt and pepper. Then fry in frying pan on medium heat, 5 minutes on each side.
