HEALTHY CABBAGE CHICKEN SAUSAGE SHEET PAN

I am all about simple sheet pan meals that you can then divide up onto all the plates for dinner for easy serving! Also, divide into all the lunch prep containers for easy-to-go meal prep!

INGREDIENTS:

– Potatoes – Cabbage – Italian chicken sausages – Olive oil – Garlic powder – Onion powder – Paprika – Oregano – Wine vinegar

In a large bowl, add the cleaned & diced potatoes. Then drizzle the olive oil on top of the potatoes. Season with 1 tsp salt, garlic powder, onion powder, paprika, oregano, & pepper.

Instructions:

Toss until they are evenly coated. Then spread it out on a baking sheet, as seen here. Then roast potatoes at 425° for 10 minutes. Then take a spatula & toss them around on the baking sheet.

While the potatoes are roasting, dice up the chicken sausages into  1/4-inch ringlets, and dice up your cabbage into chunks as well.

Add the cabbage to a large bowl, then pour the white wine vinegar & honey into a small bowl and whisk until incorporated.

Then pour the honey & vinegar mixture over the cabbage, and next sprinkle with 1/4 tsp salt. Toss with your hands until all the cabbage is coated.
