I am all about simple sheet pan meals that you can then divide up onto all the plates for dinner for easy serving! Also, divide into all the lunch prep containers for easy-to-go meal prep!
In a large bowl, add the cleaned & diced potatoes. Then drizzle the olive oil on top of the potatoes. Season with 1 tsp salt, garlic powder, onion powder, paprika, oregano, & pepper.
Toss until they are evenly coated. Then spread it out on a baking sheet, as seen here. Then roast potatoes at 425° for 10 minutes. Then take a spatula & toss them around on the baking sheet.
