EASY SHREDDED SWEET POTATO CHIPOTLE WONTONS

Shredded Sweet Potatoes are going to be a game changer for you and I cannot wait for this recipe to either reintroduce or introduce you to them.

INGREDIENTS:

– Wonton wrappers – Chipotle mayo – Sweet potatoes – Shallots – Garlic – Olive oil – Butter

The way these shredded sweet potatoes pair so well with HGHF Chipotle Mayo is one for the books.

Preheat oven to 400°. Wash & scrub your sweet potatoes, then peel the sides. With your box grater on the largest setting, grate your sweet potatoes.

Instructions:

In a large frying pan sauté your chopped shallots and minced garlic in 3 tbsp of olive oil on medium heat for 2 mins. Then add in your shredded sweet potatoes.

After 10 minutes of sautéing, add in the 4 tbsp of chipotle mayo. Mix well until thoroughly combined. Cook for 5 more minutes on medium heat.

In your muffin tins, line each cup with 1 wonton wrapper. Put 1 1/2 tbsp of filling in each center. Sprinkle crumbled cotija cheese on top and repeat for each one.
