EASY BACON CHEDDAR CORNBREAD MUFFIN

These are everything you need for your Thanksgiving dinner festivities or a fun holiday breakfast with an egg on top. You are going to love these!

INGREDIENTS:

– Cornbread – Grapeseed oil – Milk – Bacon – Cheddar – Pepper jack cheese – Green onions

Preheat the oven to 350 degrees and grease a 12-cup muffin tin or line it with muffin liners.

Instructions:

Cook bacon using your favorite cooking method until it is about 3/4 cooked. My preference is stovetop, for 3–4 minutes on each side at medium heat.

Shred the 4 oz of sharp cheddar and 4 oz of pepper jack cheese and place in a bowl to set aside. Then chop the green onions into bite-sized pieces.

In a large mixing bowl, add the whole box of Kodiak Cakes Homestead Style Cornbread, eggs, milk, butter, or oil, and mix until combined with a spatula.

Next, chop up the bacon into bite-sized pieces and add them to the bowl. After, add in the cheese and green onions and fold with a spatula until combined.
