DELECTABLE VEGETARIAN TACOS

The majority of the ingredients are pantry items & freezer veggies; you are going to be obsessed.

INGREDIENTS:

– lentils – mushrooms – garlic – tomatoes – black beans – corn – onion – red wine – butter – olive oil – lime – cilantro – taco shells

Instructions:

Add 1 cup of dried lentils to 4 cups of warm water in a stove pot. Then let it simmer for 20 minutes with the lid tilted on top.

In a high-power food processor, add 10 baby Bella mushrooms & pulse until tiny to medium-sized pieces as seen here.

Then add 1/2 of the yellow onion, cut into 1/4 into the same food processor, & pulse until finely chopped, as seen here. Then transfer to a small bowl. 

In a large frying pan, add 2 tbsp olive oil and let it heat for 2 minutes on medium heat. Then add them to the bowl with the onions & garlic. Let it sauté for 2 to 3 more minutes.

Then chop up 1 tbsp of butter on top of the mushrooms & continue to mix. Season with 1 teaspoon salt & couple of grinds of pepper.
