The veggie sandwich is the kind of recipe where you debate making as a food blogger.. because it’s like “okay isn’t it just going to be a veggie sandwich?” “aren’t there already a million other veggie sandwiches?” “why THIS veggie sandwich?” I mean yes all of those questions are quite valid, however I am here to debunk those comments and have you FALL IN LOVE with The Ultimate Healthy Veggie Sandwich. The combo of veggies I have in this delicious sandwich PLUS the chive basil cream cheese just takes it over the top, to THE ULTIMATE, I mean just take a look below. Ya can’t keep your hands off. It is ALL about the Layering with this Ultimate Healthy Veggie Sandwich
Have you ever gone to take a big bite of the sandwich you have been wanting so bad and it ALL FALLS OUT. That is a bit devastating, don’t you think? Or is that just me LOL. I mean obviously I still am going to love it and eat it, however it is annoying to keep having to show it all back in the sandwich. That is where the layering comes in. I have eaten this sandwich so many times & only a pepper might slip out now and again, but truly– it holds together so well!
Here is what you need to do, to layer this Ultimate Healthy Veggie Sandwich perfectly:
- Spread a generous layer of the Chive Basil Cream Cheese (see recipe below) on each slice of the ciabatta bread
- On the bottom slice of ciabatta bread place the thinly sliced tomatoes and sprinkle with salt
- Cucumbers come next
- Slice of Havarti cheese
- Thinly sliced red peppers
- Then get started on the top ciabatta bun, place thinly sliced red onion on the top half cream cheese, then the avocado slices.
- Place the lettuce & sprouts over the red peppers and then sandwich the top ciabatta bread on top. Press down a bit and then stick a tooth pick in the middle and you are good to go!

Every sandwich needs a delicious spread. I mean you cannot just do mayo when it comes to making the The Ultimate Healthy Veggie Sandwich, you need a flavorful spread to take the sandwich over the top.
- 1 block of cream cheese
- 1 clove of garlic minced
- 3 basil leaves chopped
- 1 tbsp chive roughly chopped & lightly packed
- 2 tsp lemon juice
- 1/4 tsp pepper & pinch of salt
In a food processor add all the ingredients. Pulse until fully combined & then place in air tight container until ready to make the sandwiches.

Does other cheese besides Havarti work?
Sure! Choose your favorite sliced cheese! I like havarti because it is creamy, great taste, but not too strong to take away from the Chive Basil Cream Cheese or the veggies
Am I able to prep this sandwich ahead of time for lunch or does it get too soggy?
Yes! Okay so how this is layered the cream cheese creates a great barrier for the tomatoes against the bread! Ciabatta bread also is the perfect bread for this sandwich & holds the ingredients together perfectly without getting soggy

5 to 7 days in the fridge in air tight container

- 1 large cucumber
- 1/3 cup sliced red onion
- Mixed Greens
- Sprouts
- 4 slices of Havarti Cheese
- 1 large avocado
