Alright this copy cat Taco Bell Mexican Pizza is THE REAL DEAL. I mean it was a sad sad time in November when Taco Bell said they were retiring the Mexican Pizza from their menu, I mean could 2020 have gotten ANY WORSE?! Therefore, what do you do when this happens… well you recreate it in the kitchen that’s what! This recipe is easy, delicious, kid friendly and lightened up with ground chicken. Time to put The Best Taco Bell Mexican Pizza on your meal plans this week!
Ingredients I Need For The Best Taco Bell Mexican Pizza
- Ground Chicken
- Jalapeno
- Onion
- Garlic
- 1 packet of your favorite Taco Seasoning
- Refried Beans
- Red Enchilada Sauce
- Thick Monterey Jack Shredded Cheese
- Tortillas (these are our favorites, we get them from Costco)
- Cilantro
- Diced Tomatoes
How Do You Layer The Mexican Pizza?
It is very crucial to follow the layering process to get the exact Taco Bell Mexican Pizza taste 🙂 Down to the pressing the cheese into the enchilada sauce on the top. That stops the enchilada sauce from spreading and creates that perfect cheese melt. You know the cheese melt on top of that Taco Bell Mexican Pizza.. the one where it isn’t FULLY melted and brown, just melted!
How to make The Best Taco Bell Mexican Pizza
Ingredients:
Makes 6 Pizzas
- 1 pound ground chicken
- 1/2 jalapeño deseeded and diced finely
- 1/4 yellow onion diced finely
- 1 clove garlic
- 2 tbsp olive oil (plus a little to spray on tortillas)
- 1 packet of your favorite taco seasoning
- 12 tortillas
- 1 15 oz Red Enchilada Sauce
- 2 16oz Refried Beans Can
- 12 oz Thick Shredded Monterey Jack Cheese
- Cilantro
- Diced Tomatoes
Directions:
- Pre heat oven to 425. Then in medium frying pan add olive oil and heat on medium heat. Add 1/4 yellow onion diced finely, 1/2 jalapeño deseeded and diced finely, and garlic clove minced. Let it sauté for 2 minutes, continuing to stir occasionally. After add in your ground chicken and break apart into bite sized pieces, until cooked through.
- Then follow instructions on the back of your taco seasoning packet.
- Once taco meat is cooked, add to a small bowl and work on your tortillas. On a large baking sheet add 4 tortillas, spray tops with a little olive oil. Depending if they are the pre cooked or uncooked will determine your time.
- For uncooked tortillas about 4 minutes on first side, and 2 minutes on the other at 425. Already cooked tortillas bake 2 minutes on each side at 425. Keep a knife handy when baking your uncooked tortillas. Peak at those tortillas often, uncooked tortillas start to bubble up in the oven, so pop the bubbles with the knife for even cooking.
- While the tortillas are cooking, heat up your 2 cans of refried beans in small sauce pan. On low, stir occasionally so it heats through and does not burn. Once it is cooked all the way through, add 6 tbsp of the red enchilada sauce, then reserve the rest for the tops of the Mexican Pizzas.
- Once your tortillas are cooked, refried beans are heated and ground chicken is cooked you are ready to layer!
- Place the first tortilla on the baking sheet again. Then spread refried beans enchilada mixture in an even layer. Sprinkle the ground chicken over the refried beans, then Monterey Jack cheese, followed by the second tortilla. After take 3 tbsp of the red enchilada sauce and spread over the top of the second tortilla, starting in the center and working out.
- Lastly sprinkle cheese over the red enchilada sauce, press down into the sauce and place it back in the oven at 425 for 5 minutes. Once out of the oven, sprinkle with diced tomatoes, cilantro, cut and enjoy!

Can I use Gluten Free Tortillas?
I have not used GF tortillas for this recipe before, but I am sure you can! The timing maybe different in the oven, so just make sure you are keeping extra watch!
Are you able to make this Dairy Free?
I have not made Mexican Pizza’s dairy free, however I am sure if there is a shredded cheese that is dairy free that you enjoy, it would work with this recipe.
Should the refried beans be refried black beans or refried pinto beans?
For this recipe we prefer refried pinto beans over refried black beans, but you can choose which you’d prefer!
Do you have to use ground chicken or can you use ground beef for the Mexican Pizza’s?
You can use ground beef! Just make sure you strain it first.
The Best Taco Bell Mexican Pizza

Delish! I had a lot of refried beans and enchilada sauce and meat left over. I think maybe we used smaller tortillas than the recipe called for. Tasted really good! We just ended up making 5 pizzas instead of 2. We’ll definitely make it again!
