The Best Instant Pot Chicken Taquitos have already been made over 10 times by you guys just via stories on Instagram! I posted how to make these on my Instagram stories on the Fourth of July and you guys went crazy for them. ( which made me so excited and motivated to get these up ASAP!) I always try to put easy to follow recipes up on stories or content that you may not see always in feed or on here– so make sure you always check those out! ( @honestfoodie_blog)
With that being said, I have lived off of these for the last 2 weeks hahah. I recipe tested until perfect and ghdn made them for Fourth of July dinner for our family coming over. Then I made them again to shoot the photos along with video. Needless to say I have them down to a science and honestly we still are not sick of them! The Best Instant Pot Chicken Taquitos are for sure going to live up to the hype. I am so excited for you all to start making them!
What Deliciously EASY Ingredients are in The Best Instant Pot Chicken Taquitos
- 2 – 2 1/2 pounds of boneless skinless chicken breasts ( normally around 5, but these were 3 large chicken breasts)
- 1 packet of taco seasoning (1)
- block of cream cheese
- 15oz can of spicy black beans
- 16 oz of your favorite salsa
- 24 oz mild cheddar cheese
- 6 oz green chilies
- 24 6inch tortillas
Directions
Preheat oven to 400 degrees
- In an 8 X 8 or 9 X 13 baking dish place your boneless skinless chicken breasts. Sprinkle 1 tbsp of your favorite taco seasoning on each side and rub it in throughly.
- Place 1 cup of your favorite salsa at the bottom of the instant pot insert. Nestle your seasoned chicken breasts into the salsa, then pour 1 more cup of salsa on top.
- Secure the Instant Pot lid and the steam release valve to seal. Press the high pressure button and adjust the time to 10 minutes. The screen will display the word: ON while it comes it pressure. It will take about 5-8 minutes for the instant pot to come to pressure. Then it will read 00:10 and continue to cook for 10 minutes. Once it reaches 00:00 it will beep. You will NOT release the steam yet. You will let it “naturally release” which means you won’t touch it until you wait for the screen to read LO 00:05 or 00:05 depending on Instant Pot you have.
- Then you will release the steam valve and once the valve drops, you will take lid off and remove chicken to rest on a plate. Next you will reserve 1 1/2 cups of the salsa from inside the pot and place in a bowl. Next you will place the block of cream cheese in the salsa to soften and start mixing with a spatula.
- Once chicken has rested, you will shred it with two forks or my favorite method of shredding in the Kitchen Aid mixer. Add the shredded chicken back into the cream cheese salsa mixture. Fold in until throughly combined. Then add in the green chilies and fold again.
- After you will start rolling your taquitos. Place 2-3 tbsp of mixture on the far side of longest side of the tortilla. Then you will sprinkle drained and rinsed black beans on top, shredded mild cheddar and then you will start to roll tightly. Fold inside the stuffing tightly and continue to roll 3 to 4 times like a roll up to insure they are securely rolled. See video below if you are unsure!
- Continue until all taquitos are rolled and placed on baking sheet. Bake at 400 degrees for 15 minutes, then serve with homemade guacamole and queso!

Recommendations for The Best Instant Pot Chicken Taquitos
Boneless skinless chicken breasts: if you use 2 1/2 pounds you will have closer to 30 taquitos and 2 pounds will be about 24.
Taco seasoning: you can choose whatever taco seasoning you like from the store or homemade recipe you enjoy!
Block of cream cheese: I highly recommend full fat cream cheese so that it does not add more liquid to the salsa mixture
Spicy black beans: make sure you rinse and drain them before using them
Favorite salsa: We have always used a mild and chunky salsa and it works so well. Have the bites of tomatoes in the taquitos is so good!
Mild cheddar cheese: mild cheddar or sharp cheddar are the two cheeses that I highly recommend You want a strong cheese to be able to cut through the taste of the chicken and tortilla. Ability to hold their own! It is perfect.
Green chilies: I love using the mild green chilies, but if you want a little more a heat use the hot 🙂
24 6inch tortillas : I highly recommend using flour tortillas because they are way easier to roll than other types of tortillas
Questions When Making The Best Instant Pot Chicken Taquitos
What is the best way to store The Best Instant Pot Chicken Taquitos?
+If you are storing them for a meal for the week, store in an air tight container for 3 to 5 days.
+ Freezing for later meals– I love rolling them and not baking them, but wrapping in aluminum foil. That way you can take them out for easy meals. Heat at 400 degrees in the oven for 25 minutes, keep in aluminum foil and then take out of foil place on baking sheet and bake until crispy brown on top about 5 more minutes. If they need more time do 2 minute increments after that. Every oven is different, so adjust as need be!
+ Freeze leftover Chicken Taquito meat in a freezer safe container for up to 1 month in the freezer.
Can I use my Crock Pot instead of Instant Pot?
Yes! It is one of my favorite methods as well. See above and below on recipe card for instructions.
Am I able to use other tortillas besides flour?
I have not used any besides flour, because other types of tortillas usually crack when rolled. However, if corn or corn/flour are the only ones available– wrap in a damp paper towel and zap for 10 seconds, then a few second increments after that to steam. That will make them easier to roll.
Do the tortillas need to be 6inches?
Yes 🙂 or else they are burritos– which nothing is wrong with that, but we are wanting taquito sizes
Can I use other cheese besides mild or sharp cheddar?
I highly recommend using mild or sharp cheddar. You want a strong cheese to be able to cut through the taste of the chicken and tortilla. Ability to hold their own! It is perfect.

So yummy!!! I made a version of these but we have to use corn tortillas. I warmed them to soften them before rolling and then just brushed the outside with canola oil before baking and they were a HIT! Definitely going into the recipe rotation!

Oh. My. Goodness. Seriously so good!! I made mine in the crockpot. I did everything the same just put it in the crockpot on high for 3.5 hours! I put my leftovers in the freezer and will reheat for an easy lunch or dinner!

This recipe is AMAZING. Don’t think about making it….just make it. The filling is so delicious you can just eat it right out of the pot (and I did). I thought with so many components it’s be complicated, but most of it is just dumping it in and then rolling it up. Fast. Easy. And DELICIOUS. My boyfriend could not stop raving about them and is already asking me to make them again.
PS I don’t have an instant pot, so I just cooked the chicken in a pot on the stove and then fork shredded everything and it worked out great…if you’re like me and don’t have an instant pot haha.
