- 10 oz shredded seasoned hash browns
- 1 cup sour cream
- 7 oz greek yogurt
- 1 cup sweet frozen corn
- 1 large poblano pepper deseeded & diced ( 1 cup)
- 1 cup shredded cheese
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 3 garlic cloves minced

Simple Directions for This Delicious Casserole
- Preheat oven to 350 degrees and grease your 9 X 13 baking dish
- Make sure that your frozen has browns have been thawed on the counter top for at least 1 to 2 hours
- Add your thawed hash browns to large bowl. Then add your 1 tsp salt, 1/2 tsp pepper and 1/2 tsp paprika and 3 cloves garlic minced. Evenly disperse with spatula.
- Then add your sour cream & Greek Yogurt mixture. Fold until fully incorporated. Then fold in your corn, chopped & deseeded poblano peppers and shredded cheese.
- Sprinkle remaining shredded cheese on top and bake for 50 minutes at 350 degrees.
- Then devour with whatever meal your or having or have this as your meal… no judgements!

It is so delicious, and you truly can just eat the whole baking dish 🙂 No judgements there!
Over 1,000 calories vs. 445 calories
Now I am not about counting calories, and there are so many nutritiously dense foods that have higher calories, and higher fat content but they are healthy fats! However, when it comes down to these tiny changes, we are looking at healthier options while lowering fat & calories.
1 cup of Mayonnaise has : 1,445 calories & 165 grams of fat
so this recipe would need almost 2 cups of mayonnaise, that is almost 3,000 calories just in the mayonnaise. It would also be over 300 grams of fat!
1 cup of Greek Yogurt has: 100 calories & .7 grams of fat
1 cup of Sour Cream has: 445 calories & 45 grams of fat
So holy cow… you can see by the numbers up there how much the Greek Yogurt & Sour Cream substitution does wonders!
