Who else has always been obsessed with Funfetti Cake since they were little? Um.. I have! That is why I knew I needed to create a healthy, easy and delicious Funfetti Mug Cake.
Guys, I am going to be honest… I use to think that the mug cake fade must be made up, or I was honestly missing something! Every time I tried a mug cake recipe it turned out: spongy, tasteless, chewy… list goes on and on. I swear I would follow the recipe! hahah I just felt like I would have no luck.
Fast forward 2 years, and here I am creating my own mug cake recipes! hahah. As I embarked on this journey, I realized how HARD it is to create a successful mug cake recipe, because so easily they turn out.. spongy, tasteless & chewy hahah. However, after MANY attempts, many recipes and successful ones that emerged from there,
I have 5 helpful mug cake tips that I cannot wait to share with you!
On HGHF, the Banana Chocolate Mug cake was on of my first recipes, I’d make with my daughter all the time. It took about 10 tries to get it just perfect and this birthday mug cake took about 12…! SO so so worth it. My goodness it is good. I cannot WAIT to share the recipe with you.
Also something that makes it 10X better than a “normal” mug cake? I am using Karuna’s Empower Whole Plant Smoothie in place of milk for this recipe. It is a prebiotic fiber & protein. The Banana Cinnamon flavor is one of our favorites. So you TRULY can have you cake & eat it too, adding Karuna means we are actually promoting healthy digestion… while eating cake? I mean… heck to the yes!

TOP 5 TIPS so your Mug Cakes turn out successful each time!
1. Do not amend the recipe.
I can tell you from personal experience and with creating mug cake recipes, they are down to a science. That extra little bit of milk or the 1 tsp of this etc. it is there to make sure the mug cake turns out right. So omitting the egg or changing the flour to GF or all purpose, can change it completely! So make sure you just follow the recipe as is, unless the recipe creator notes other wise— or you may run the risk of it being a flop.
2. Avoid using tall skinny mugs:
I recommend using a large wide mug or small wide mug. I personally love using a wide ramekin like you see in the picture for the mug cakes. Why do this? Using tall skinny mugs, actually makes it difficult for the cake to cook evenly when microwaved. Ever had the cake be done, on top, but get to the bottom and it isn’t cooked all the way? This will help fix that! 🙂
3. ALWAYS use butter if your recipe doesn’t have banana in it:
Even if a recipe calls for oil, a lot of times they end up rubbery, because butter provides that lighter and fluffier texture. However, banana is a great substitute for butter ( in my Banana Chocolate Mug Cake recipe for example). So when it doubt always use the unsalted butter.
4. Don’t omit the egg:
It is key to thickening and adding moisture to our cake, it also makes our cake more rich, which is exactly what we want! However, when adding the egg MIX. MIX. MIX. You want to make sure it is fully mixed, so you don’t have any white pieces of cooked egg in your cake. That is why I always whisk it first in the ramekin.
5. Take your mug cake out of the microwave when it is still a little wet in the center:
Won’t that mean it isn’t done? No, actually! You want to microwave it until the sides start coming off the sides of the mug or ramekin. The top should start to harden, however still be sticky! The center should be a little wet when touched. If it doesn’t stick you have microwaved it too long. If the center is still really well, microwave it for about 5-10 second increments until you get that slightly-sticky touch.
THIS IS KEY! I saved the best for last. Since everyones microwave is different, it can be hard to tell when to take I out.
The Best Funfetti Mug Cake
Mix your dry and wet ingredients separaetly
Combine your wet and dry ingredients. Then add in the strawberries and sprinkles.
Strawberry Funfetti Birthday Mug Cake
Ingredients
- 2 tbsp oat flour
- 2 tbsp all purpose flour
- 1/2 tsp baking powder
- pinch of salt
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 2 tbsp Karuna Whole Plant Smoothie : Banana & Cinnamon
- 2 tbsp unsalted butter melted
- 1 tbsp coconut sugar
- 1 egg
- 1/3 cup chopped strawberries
- 1 funfetti or birthday cake cookie
- cookie isles in local grocers & health food stores! I love the plant based or GF ones
- 1 tbsp Rainbow Sprinkles
- preferably ones that are NON GMO & use no artificial colors/dyes– there are a lot more of these options now.
Instructions
- please make sure you go read my 5 tips before making! A lot of times mug cakes doesn’t turn out how we want them too, however if you follow those steps & the recipe, I guarantee success! 🙂
- In mug or ramekin ( linked the one from Target I use that works perfect!) add in egg, and whisk until it is FULLY whisked. Then add in the vanilla extract, almond extract, Karuna, melted butter and whisk until fully incorporated. Then in separate bowl add in your oat flour, all purpose flower, salt, coconut sugar and baking power. Whisk until incorporated.
- Add in the dry ingredients to your wet and mix until incorporated. Then add in your chopped strawberries, funfetti or birthday cake cookie broken up and rainbow sprinkles. Fold until mixed in.
- Place in microwave for 1 minutes and 30 seconds. Then check to see if it looks like the consistency below. You want to microwave it until the sides start coming off the sides of the mug or ramekin. The top should start to harden, however still be sticky! The center should be a little wet when touched. If it doesn’t stick you have microwaved it too long. If the center is still really well, microwave it for about 5-10 second increments until you get that slightly-sticky touch. ** this step is so important so make sure you are keeping an eye on it so it doesn’t over cook.
- Then top with whipped cream, ice cream or whatever fits your dietary needs! Then dig in!! Can’ wait to see you guys enjoy!! ( we have made it 3 times the last 2 days!)
