Trader Joe’s Edamame hummus was one of my all time favorite things there. Then about 3 or 4 years ago they stopped selling it. When they stopped it was quite devastating for our family hahah considering it was a go to in this household. Not only because it tasted amazing but also because it was a terrific healthy snack. Then fast forward to now, I was in the frozen vegetable section looking for the corn and I grabbed a bag of frozen edamame instead. Then the lightbulb went off in my foodie head… oh my goodness I am going to RE CREATE The Best Edamame Hummus like Trader Joe’s had. That my friends is how this delicious dip was recreated!
I was so excited when I finally nailed it. I got the bagel chips we always use to eat it on and dipped in, gave it to my dad without telling him what it was. His exact words were “oh my gosh….. is this….” BINGO, it tasted just like it! I am not sure how I got it to be exactly like it, considering I don’t have their recipe and haven’t eaten in years, but let’s just say it was meant to be. 🙂 Now my family has officially called HGHF version of The Best Edamame Hummus as THE BEST hummus. I cannot wait for you all to make this healthy snack, appetizer and down right delicious hummus.
What Makes Edamame Such a Healthy Snack?
What is edamame always? I mean it is green and it makes a green hummus… sometimes green can turn people off! Truth, but ladies and gents be prepared to not be turned off one bit. It is not only so delicious, but it packed with nutrients.
What is edamame? they are whole immature soy beans that are typically eaten in Asia and are quickly gaining popularity in the Western countries. ( thank goodness!) Edamame differ from regular soy beans, because edamame is green and often sold in their pods. However, you can buy edamame without being encased in their pods, called “shelled edamame,” which is what you will be using for this recipe. You will get the shelled edamame that you can get from the freezer section at your local grocery store.

What Ingredients Make Up The Best Edamame Hummus?
The Best Edamame Hummus is not only super delicious, but is super easy as well! Below are the ingredients you will need to make your new favorite snack!
- 2/3 cup frozen shelled edamame
- 1/4 cup drained canned chick peas ( Garbanzo beans)
- 1/3 cup grape seed oil or light olive oil
- 2 tbsp lemon juice ( about 1 lemon)
- 1 1/2 tsp sesame tahini
- 3/4 tsp kosher salt
- 1/2 tsp granulated monk fruit sweetener or granulated cane sugar
- 1/4 tsp onion powder
Directions:
1. Add 2/3 cup of frozen shelled edamame to a microwave safe container with 2 tbsp water. Microwave for 3 1/2 minutes giving it a few stirs. Then rinse in cold water and set aside. 2. Then you will drain and rinse your chick peas as well and set aside 3. Then in your high power food processor add your edamame, chick peas, grape seed oil, lemon juice, tahini, salt, onion powder & sweetener. 4.  Puree on high for 1 minute. Then take spatula, scrape down the sides and then puree for another minute 5. Pour into serving bowl and then top with toasted pine nuts, red pepper flakes, feta & more edamame and dig in! *** store in an air tight container for 5 to 7 days in the fridge! Also tastes even better after it has set in the fridge over night or at least an hour. |

Why do you need to use light olive oil or grape seed oil instead of regular olive oil?
Regular olive oil has too much of an over powering taste and doesn’t balance well. You want to be able to taste all the flavors and when you use regular olive oil it normally takes over all the taste.
