They are donuts you can throw together the morning of and are made with 100% whole grain wheat flour and flaxseed meal. Plus, instead of being fried they are baked to perfection, with every little taste of Fall. So who is ready for The Best and Easiest Pumpkin Donuts for breakfast??
What is the SECRET to these donuts….
Kodiak Cakes of course!
Kodiak Cakes is one of my absolute favorite brands. Not only are they the best to work with, because all the employees are oh so awesome– but their product is one my family stands behind. Every pancake and waffle pre made mix makes things easy right? However, they are in no means equal!
Ingredients from a popular Pancake Mix
bleached wheat flour (enriched with niacin, iron, thiamine mononitrate, riboflavin and folic acid), corn starch, dextrose, palm oil, leavening (baking soda, sodium aluminum phosphate, monocalcium phosphate), canola oil, salt, sugar, DATEM, and distilled monoglycerides.
EEEK Bleached Flour... what is bleached flour? Essentially it means adding bleaching agents to speed up a flours aging process. Getting a finer-grain flour with a softer texture. So let me say that again.. chemicals… chemicals chemicals. Enriched flour which long story short means that the nutrients are stripped from it.
SO not what we want to fuel our bodies with, in order to make sure we are fueled to start our day! Eating bleached and enriched flours calls for sugar crash early on! What is the answer then?

4 Ingredients Away From Pumpkin Donuts??
Oh yes… it sure is not a joke! These babies are made with 4 ingredients and are about to blow your mind this morning!
- Pumpkin Puree
- Coconut Oil
- Egg
- Kodiak Cake Pumpkin Flax Mix ( don’t forget to use ALAINA15 at check out for discount on your Kodiak Cake Stash!)

The Best and Easiest Pumpkin Donuts
Equipment
- Donut molds
Ingredients
- 1 1/2 cup Kodiak Cake Pumpkin Flax Mix
- 1/2 can canned pumpkin not pumpkin pie, plain pumpin
- 1/8 cup coconut oil melted
- 1 egg
Cinnamon Sugar Coating
- 2 tbsp unsalted butter
- 1/4 cup coconut sugar or brown sugar
- 1 tsp cinammon
Instructions
- Pre heat oven to 350 degrees and grease your donut molds
- In a large mixing bowl add pumpkin flax mix, coconut oil, pumpkin and egg.
- Mix with a spatula until combined ( do not over mix)
- Cut a tip of a blastic bag to about a 1/2 inch wide. Pour batter inside. Twist the top of the plastic bag to where it provides pressure on the batter. Squeeze out batter around the donut mold
- Take the back of the spatula and flatten the batter on the top. This will ensure when you pop them out then can sit flat
- Bake at 350 degrees for 15 minutes
- While they are baking melt 2 tbsp butter and whisk together the cinnamon and coconut sugar in a seprate bowl and set aside.
- Once the donuts are done, let them cool for 5 minutes before popping out of the molds to make sure they don't break. Once cooled, dip the tops into the butter then into the cinnamon sugar mix.
- Repeat for all donuts then enjoy!

I have the regular Kodiak pancake mix. Can I add flax meal (which I do have) and maybe more pumpkin puree to the Kodiak mix I have?
