Or should I say WHAT is behind these delicious Sugar Free Strawberry Shortcake Bars. 🙂 Two things that make these sugar free bars come true, Karuna Prebiotic Superfood Beverages and monk fruit granulated sweetener! Karuna drinks are also sweetened with monk fruit as well as all the delicious plant based ingredients.
WHAT MAKES MONK FRUIT SO MAGICAL!?
Monk fruit sweetener has actually be around for decades, but since there is an increasing popularity for alternatives sweeteners. Monk fruit sweetener comes from monk fruit, which is a small round fruit that is found and grown in Southwest Asia.
In order to create monk fruit sweetener, the seeds and the skin is extracted and crushed to create the juice. Then turn them into concentrated powder or granulate monk fruit sweeter that is used in this recipe!
It has a unique antioxidant called mogroside, that makes it sweeter than regular sugar. However, in this recipe I still recommend using 1 cup of monk fruit sweetener. There is no sugar in monk fruit, so consuming it will not impact your blood sugar level

This recipe is in collaboration with one of my favorite companies Karuna. They are an incredible prebiotic superfood beverage company that focuses on organic, Non GMO antioxidant, Prebiotic Fiber, clean protein, and nutrition ingredients.
SO WHAT IS THE BIG DEAL? AREN’T THEY JUST JUICE OR SMOOTHIES?
HARDLY. I don’t really give Ainsley juice that often, but whenever she asks for Karuna Juices I am all about it! Why?

What Ingredients are in these Sugar Free Strawberry Shortcake Bars?
Strawberry Short Cake Layer
- 2 Cups All Purpose Flour
- 1/2 cup old fashioned rolled oats
- 1 cup Monk Fruit Sweetener
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1 cup butter ( I prefer salted)
- 2 tbsp Karuna Silky Oat
- 1 egg
Strawberry Shortcake Filling
- 4 cups chopped strawberries
- 1/2 cup monk fruit sweetener
- 2 tbsp Karuna Silky Oat
- 1 tbsp lemon juice
- 1 tsp xanthan gum
Directions for Sugar Free Strawberry Shortcake Bars
Strawberry Shortcake Layer
- Preheat oven to 375 degrees and line your 9 X 13 baking dish with parchment paper. Lightly spray olive oil spray on the parchment paper.
- In a large mixing bowl add your all purpose flour, old fashioned rolled oats, baking powder, salt & 1 cup monk fruit granulated sweetener. Whisk until fully incorporated
- In small bowl whisk egg, vanilla extract, almond extract and 2 tbsp Karuna Silky Oat
- In your large mixing bowl add in your 1 cup butter diced, and the egg mixture. Take a fork or a pastry cutter to incorporate the butter into the mixture, until it becomes a perfect crumble mixture. About 1 minute.
- After take 1/2 the mixture and press down firmly in the baking dish.
Strawberry Shortcake Filling
- Add the chopped strawberries to a medium bowl, 1/2 cup monk fruit sweetener, 2 tbsp Karuna Silky Oat, 1 tbsp lemon juice and 1 tsp xanthan gum.
- Toss until fully coated
Assembling Sugar Free Strawberry Shortcake Bars
- you will now take your strawberry shortcake filling and spread it evenly over the 1/2 of the mixture you pressed down in the baking dish alread
- Then take the other half of the Strawberry Shortcake Layer and sprinkled on top. Press down lightly, then bake at 375 degrees for 30 minutes
- They will need an hour to cool before they are bar form, however you can cut into them right away for crumble or let cool for perfect bar formation. Top with delicious ice cream and enjoy!
