What is a pancake bake?
Pancake bake is essentially a GIANT sheet pan pancake. For this Simple Strawberry Cream Cheese Pancake Bake you will bake all your delicious ingredients in one large sheet pan, pop it into the oven, bake it and VOILA. What Delicious Ingredients Do We Need For This Simple Strawberry Cream Cheese Pancake Bake?
- Kodiak Cake Buttermilk Flapjack and Waffle Mix
- Milk of choice
- Baking soda
- Eggs
- Coconut oil melted
- Vanilla extract
- Diced strawberries
- Strawberries to slice for the top
- Cream cheese (depending on how much you want on the top & what sheet pan you use)
- Coconut sugar
What is the best way to store the Simple Strawberry Cream Cheese Pancake Bake?
Since it has cream cheese in it, you want to keep in refrigerated not on the counter. In order for it to not dry out, make sure it is either fully wrapped in plastic wrap or air tight container.
Can other fruit be used instead of strawberries?
Yes! Blueberries would also be delicious with it. Let me know what combination you choose.
Which size sheet pan do I choose?
If you are baking in a 12 X 18 baking sheet, bake for 20 minutes– until the toothpick comes out clean. If you are baking in a 9 X 13 baking sheet, cook for 30-35 minutes. At minute 20 you may need to cover with aluminum foil so the top does not burn.
The 9 X 13 gives you thicker pancakes, which is what I prefer 🙂
Can I use another power cake mix?
I have not used another power cake mix yet, but I feel like the chocolate power cakes would be delicious with it! Let me know if you try another one!

Simple Strawberry Cream Cheese Pancake Bake
Ingredients
- 2 cups Kodiak Cake Buttermilk Flapjack and Waffle Mix
- 2 cups milk of choice
- 1 tsp baking soda
- 2 eggs
- 3 tbsp coconut oil melted
- 1 ½ vanilla extract
- 1 cup diced strawberries
- 6 strawberries to slice for the top
- 2-4 oz cream cheese depending on how much you want on the top & what sheet pan you use
- 1 tbsp coconut sugar
Instructions
- Preheat oven to 425
- In a microwave safe bowl melt your 3 tbsp of coconut oil in 30 second increments until melted. Then set aside to cool while you get the rest of your ingredients ready.
- In a large mixing bowl add the Kodiak Cake mix and baking soda, whisk and set aside.
- Grease generously a 9 X 13 baking sheet (for thicker pancakes) or a 12 X 18 ( for thinner pancakes)
- With your melted coconut oil add in the eggs, milk and vanilla extract. Whisk until thoroughly combined. Then pour your wet ingredients into the dry. With a spatula fold in the wet ingredients with the dry until just combined.
- Next you will fold in your diced strawberries and set aside. Let the mixture stand for 2 minutes to thicken.
- Then pour your mixture into the greased baking sheet. Decorate the top with sliced strawberries and quarter sized pieces of cream cheese. Just lay them on top of the batter. (this is where you can add as little or as much as you prefer) Then sprinkle top with coconut sugar
- If you are baking in a 12 X 18 baking sheet, bake for 15-20 minutes– until the toothpick comes out clean. If you are baking in a 9 X 13 baking sheet, cook for 30-35 minutes. At minute 20 you may need to cover with aluminum foil so the top does not burn.
