I use to hide my lunch underneath the lunch table in the cafeteria at my elementary school. Why might you ask? I love tuna for lunch and whenever I would bring it though, I always got the looks– because lets be honest, it does not smell the greatest. I always felt self conscious as a kiddo bring it! hahah it seems so silly to think back on that now. Anyone else go through that at school? I can’t be the only one! Ainsley loves tuna too, so I know she will be going through the same lunch situation as I did when she gets to elementary school 🙂 I love the healthy classic tuna salad, that is more a traditional style tuna salad. However, I wanted to break out of the mold a little bit and do a Simple Spicy Tuna Lunch Bowl that is easy to meal prep, deliciously addicting and perfect for lunches throughout the week.
This spicy tuna recipe I also made into “tuna sushi” which I will share below too. You can use the same recipe to stuff the cucumber.

What Simple Ingredients Are Needed for the Simple Spicy Tuna Lunch Bowls
- albacore tuna
- mayo
- greek yogurt
- salt
- hot sauce
- soy sauce
- rice vinegar
One of the wonderful things about this recipe is we do a mix of mayo, Greek Yogurt and whole 30 approved hot sauce. This creates a healthier mixture for the tuna instead of heavily relying on tuna in a lot of tuna salad cases.
The soy sauce and rice vinegar give it that “sushi asian inspired” classic taste that we love. 7 easy ingredients that take your tuna salad to the next level!
Other Delicious Ingredients For the Bowl
I personally love making it like a little sushi bowl, so adding white rice is my favorite! I cook the white rice per bag instructions and then let cool while I prep everything else.
- White Rice ( you could also use brown rice or cauliflower rice for low carb option)
- Cucumbers ( cut thin slices for the best ratio when digging into your bowl )
- Avocados
- Sesame Seeds (every spicy tuna bowl needs these on top!)
- Carrots ( cut like little match sticks in the picture to be able to get onto the fork, for easy lunch bites!)

Spicy Tuna but make it Spicy Tuna Sushi
- Cut the tip of the cucumber off, not a lot of it, but to where it is now flat. Take the end of a small spoon and use that to core out the middle of the cucumber. It is helpful to use the seeds as a guide. You will make a circle cut with the end of the small spoon around the spoons and you will see it will start to come out easy. I leave about 1/4 of the cucumber around the rind.
DO NOT cut the other end off, this ensures it holds everything in and doesn’t come out the other side as you cut as well - Take 2 oz of cream cheese. In your hands roll into a log as long as your cucumber. Then place in the refrigerator until you are ready to place it inside the cucumber. The softer it is the harder it is to manipulate into the sushi.
- Take your carrot and cut it into match sticks as long as your cucumber. You will want to use 2-3 of them.
- Now it is time to stuff your cucumber! Place your cream cheese in first, flatten it down with the end of the spoon. Then place your carrot match sticks on top to really push the cream cheese down so it doesn’t move much. Then start to stuff your spicy tuna in. Use the end of the spoon too, to ensure you get as much in there as possible
- Then cut into slices like sushi!! I hold onto the front of each piece as I cut to ensure it doesn’t fall out ( see video!) Then if a piece doesn’t have as much tuna in it as I want, I will add some more on top. Then drizzle more hot sauce on top and sesame seeds as a little somethin’ somethin’ then ENJOY!!
How do I store the Simple Spicy Tuna Bowls?
What I love to do is put the Simple Spicy Tuna Bowls in little individual plastic containers: first the rice, then the tuna, cucumbers, carrots and avocado. Sprinkle with sesame seeds and then drizzle with a little ore hot sauce! Put in the fridge for 3-5 days and enjoy easy lunches!
Can this recipe be dairy free?
This could be dairy free if you were to use a dairy free greek yogurt. You dod want a thicker yogurt so it continues to stay the same consistency.
Could I do chicken with this instead?
Absolutely! I think that shredded chicken would be wonderful. I would also say that rotisserie chicken would also make the process a lot easier too. You may need to add a little more sauce, in order for the chicken to not be as dried out.
Is this recipe able to be whole 30 approved?
You could create the sauce with whole 30 mayo and omit the Greek Yogurt or you could use Whole 30 Greek Yogurt. Then with the soy sauce you could use coconut aminos instead. It will be a tad sweeter, but will be offset by the hot sauce. I use the New Primal hot sauce , I use it for all my hot sauce needs. I use it in HGHF The Best Buffalo Chicken Quesadilla ( which is also a wonderful meal prep!)

Simple Spicy Tuna Salad Bowls
Ingredients
- 3 cans albacore tuna drained
- 2 1/2 tbsp mayo of choice
- 3 tbsp greek yogurt
- 1/2 tsp salt adjust to taste
- 2 tbsp hot sauce
- 4 tsp soy sauce
- 1 tsp rice vinegar
Other bowl ingredients
- cooked white or brown rice
- cucumbers
- avocado
- carrots
- seasame seeds
Instructions
- In a medium sized bowl add in mayo, Greek Yogurt, salt, hot sauce, soy sauce and rice vinegar. Mix until throughout combined.
- Add in the 3 cans of tuna drained and break apart into bite sized pieces with a fork. Then with a spatual mix well until throughly combined.
Constructing the bowls
- See video above as well about constructing the bowls. I add the cooked rice first, followed by the tuna, sliced thin cucumebers, match stick carrots, diced avocado and sprinkle with sesame seeds. Enjoy! *** for lunch I will do this in 6 reusable constainers and then place in fridge for me and my family for the week!
