The Simple Ingredients in Simple Pecan Pie Muffins
This recipe is so easy & has easy simple ingredients to prove it. I love how they are so easily adaptable as well. If you need this recipe to be gluten free, I got ya. This recipe can be dairy free, I got you too! If you also need the recipe to be low in sugar, I 100% got you as well. Let’s go!
- 2 cups organic all purpose flour
- chopped pecans 1 1/2 cup
- coconut sugar 1 cup
- cinnamon 1 tsp
- baking soda 1 tsp
- 1/2 tsp salt
- 4 eggs
- 2/3 cup Karuna Banana Cinnamon Smoothie
- 1/2 cup unsalted butter
- 4 tbsp maple syrup
- 2 tsp vanilla extract
Optional Pecan Pie Crumblings:
- 2/3 cup flour
- 1/4 cup cold butter
- 1/2 tsp cinnamon
- 2 tbsp coconut sugar
How to make these Simple Pecan Pie Muffins Gluten Free: Use 1 to 1 gluten free flour & that is the only gluten ingredient you would need to adjust

How to make these Low Sugar Simple Pecan Pie Muffins: You can use Brown Monkfruit Sweetener
Easy Directions for the Simple Pecan Pie Muffins
- Pre heat oven to 350 degrees & line your 12 cup muffin tin with muffin liners
- Prepare your optional Pecan Pie Crumble ready if you would like to. Add the flour, coconut sugar, butter & cinnamon to your food processor. Pulse until crumbles form about 30 seconds, then set aside
- First you will melt unsalted butter and let cool while you get rest of ingredients together. Take your eggs out of the refrigerator to let them come to room temperature
- In large bowl add your dry ingredients: flour, coconut sugar, cinnamon, baking soda & salt. Whisk together until combined
- Pour butter, Karuna Banana Cinnamon smoothie, eggs, vanilla & maple syrup into medium mixing bowl. Whisk until throughly combined
- Next you will pour wet ingredients into the dry ingredients. Fold until combined, but not over mixed. Then lastly fold in the chopped pecans
- Divide batter into muffins tin, sprinkle optional pecan pie topping on top & a whole pecan in the middle of the to if you’d like! Makes them look oh so pretty!
- Bake at 350 degrees for 15 to 18 minutes. Let cool & enjoy!
