Let me tell you, this one is for sure going to be in your breakfast meal prep rotation for the week! Simple Apple Pecan Oatmeal Bake has ALL the feelings and flavors of Fall. It is hands down one of my favorite things to make. This recipe keeps well all week long and taste amazing even when reheated.
I am constantly wanting to create recipes that make our mornings easy! I work out when I can, however a lot of times lately my weekends are me catching up on lots of work. That is why I have been doing my yoga in the early mornings before work. Therefore, I need a simple easy breakfast that I can have ready to go for A when she wakes up. It makes it so much easier after my early morning workouts and after I get ready for work!
So let’s get started shall we??
What Do I Need For This Simple Apple Pecan Oatmeal Bake?
- Old Fashioned Oats ( quick oats will work as well)
- Pecans
- Apple
- Eggs
- Coconut Milk (regular milk or DF milk works)
- Apple Cider ( if you do not have apple cider, you can use milk instead)
- Maple Syrup
- Coconut oil ( may substitute butter)
- Cinnamon
- Nutmeg
- Salt
- Baking Powder
- Coconut Sugar (can substitute regular sugar as well)
HAVE to Toast the Pecans & Caramelize the Apples
One of the things that sets this oatmeal bake apart from others is that you take a few minutes to take it to that NEXT step. Doing what might you ask? Simply toasting the pecans and caramelizing the apples. This makes the Simple Apple Pecan Oatmeal Bake taste even more fantastic. Trust me on this.
All you have to do is….
In a frying pan add 1 tsp coconut oil and turn on medium heat. Chop ½ of the apple into ½ inch pieces & chop pecans. Add to frying pan and sprinkle 1 tsp coconut sugar and ½ tsp cinnamon on top. Toast & caramelize on medium low for 5 to 8 minutes.

Simple Apple Pecan Oatmeal Bake
Ingredients
- 2 cups old fashioned oats
- 2/3 cup chopped pecans
- 1 large apple
- 2 eggs
- 1 cup milk of choice
- 2/3 cup apple cider sub milk if you don’t have it
- 1/3-1/2 cup maple syrup used @runamokmaple vanilla cinnamon!
- 2 tbsp coconut oil melted & 1 tsp
- 2 tsp ground cinnamon
- 2 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp coconut sugar
- 1/8 tsp ground nutmeg
- 1/8 tsp salt
Instructions
- Preheat oven to 375 and grease an 11 X 7 pan
- In a frying pan add 1 tsp coconut oil and turn on medium heat. Chop ½ of the apple into ½ inch pieces & chop pecans. Add to frying pan and sprinkle 1 tsp coconut sugar and ½ tsp cinnamon on top. Toast & caramelize on medium low for 5 to 8 minutes.
- In a large mixing bowl add in oats, cinnamon, baking powder, nutmeg and salt. Whisk until thoroughly combined.
- In a medium bowl add in the milk, cider, maple syrup, vanilla extract, eggs, melted coconut oil ( make sure it isn’t hot when pouring in) Whisk until combined
- Add the caramelized and toasted pecans to the dry ingredients and fold in. Then pour the dry ingredients in the baking dish. Then pour wet ingredients on top. Make sure it is spread evenly, take spatula and smooth the top.
- Cut second half of apple into thin slices and layer on top of the oatmeal. Then bake at 375 for 45 minutes.
- After 45 minutes, cool for 5 minutues before cutting. Sprinkle with powdered sugar or drizzle with maple syrup!

This oatmeal bake was so simple and yummy! I swapped and used regular sugar because I didn’t have coconut sugar. I still felt like it was a great healthy breakfast option. I was able to make it Sunday and have it for breakfast the rest of the week. I cut it into bars and was able to grab one on my way out the door! It kept me feeling full and was delicious!
