I love going to events, dinners at friends houses, dinners out etc. and truly exploring & enjoying food. It is the best to go to a place and fall in love with meals, surrounded by wonderful company! One of my favorite things after that is, if I am still LOVING hardcore on a recipe, I try to recreate it at home! Some days that works really well like my Panera CopyCat Recipes ( Modern Greek & Chipotle Chicken Sandwich). Other days I find myself at the drawing board for awhile, but no matter how long it takes it is the best feeling having one your favorite recipes at home! That is how this Simple and Healthy Peach Bruschetta came to be, from an event I went to and was immediately inspired!
What is Bruschetta Anyways?
I was invited to this beautiful vineyard called Noboleis Vineyard! It is in Augusta, Missouri and we were celebrating the launch of their new sangria called Swirl! They had fun games outside, refreshing swirl of course & then small bite sized foods. There were these toased baguette slices with what seemed like salad on top. I asked the chef about it and she said it was in fact Peach Bruschetta. I had never heard of such a thing, I took a bite and four of them later hahah, I feel in love with all the flavors that it had to offer!
However, when I think of bruschetta my mind always goes toward tomatoes, basil etc. That is where this one provides a big twist from the original: no tomatoes! Bruschetta is a dish that originated in Italy, and a lot of times people like myself think bruschetta is referring to tomato type of topping. Bruschetta is actually referring to the grilled bread. Therefore, this unique version is still very much bruschetta, because are NOT missing the grilled bread 🙂
This Simple and Healthy Peach Bruschetta has 6 simple ingredients:
- Peaches
- Monk Fruit Sweenter or Cane Sugar
- Red Onion
- Goat Cheese
- Basil
- Fresh French Baguette
**optional ingredient: honey
How SIMPLE is the Simple and Healthy Peach Bruschetta?
Oh, believe me, it is very simple, fresh, delicious and something that is perfect to throw together for appetizers for dinner, guest coming over or just yourself (because believe me it is easy & worth it!).
- 1 1/4 cup of peaches cut into 1/2 inch cubes ( about 2 ripe peaches)
- 1 tbsp FINELY I mean FINELY chopped red onion
- 1/4 cup chopped fresh basil
- 8oz goat cheese log
- 3 tsp monk fruit sweetener
- 1 fresh French baguette
- In a large mixing bowl add in the peaces, monk fruit sweetener and red onion. Mix until throughly combined. The sugar is going to help draw out the juices in the peaches. Refrigerate for an hour.
- Slice your baguette into 1/4 inch thick slices, rub with butter on each slice and baked at 375 degrees on baking sheet for 8-10 minutes until golden brown
- After your peach & onion mixture has marinated, you will take it out and start to spoon about 1 tbsp amount onto the crostini slices. Sprinkle goat cheese on top and then fresh chopped basil and serve! Could also choose to serve with honey on the side, because that drizzled on top is wonderful as well!

Questions When Making Simple and Healthy Peach Bruschetta
Can I make the peach mixture ahead of time & serve it the next day?
I devour this mixture all week long… if it lasts that long 🙂 However, I recommend if you are serving to guests that you don’t let it marinade overnight. Peaches can get brown as the days go on– which does not impact the taste but just from a presentation stand point when having guests over.
What if I don’t care for goat cheese, can I use another kind of cheese?
I have not tried with other cheeses, but honestly goat cheese just pairs perfectly with it, I cannot imagine another kind– but if you find one you love besides goat cheese please let me know!
Do we have to make our own crostini’s with this recipe or can we buy some from the store?
I recommend making your own, because a lot of times the ones from the store are too thick where you don’t have a good bread to spread ratio. Also tend to be super hard to bite into as well– which with homemade crostini’s they still hold a bit of a chew to them which is wonderful.
Why use monk fruit instead of cane sugar?
I personally like to use monk fruit sweetener because it creates the recipe without any added sugar. However, you can choose what you’d like!

Made this yesterday for a pool party; it was a big hit! Multiple people commented that the basil “made” it. I used superfine pure cane sugar instead of monk fruit sweetener. DELICIOUS! Will definitely make it again!
