I am telling you right now this is by far my new favorite vegetarian recipe. Not only vegetarian recipe, but recipe in general. All of you are going to love this, meat eaters and vegetarians a like! These Shredded Sweet Potato Chipotle Wontons I could eat all day long. I also did eat them for 4 days straight… and I am proud of it! Shredded Sweet Potatoes are going to be a game changer for you and I cannot wait for this recipe to either reintroduce or introduce you to them. The way these shredded sweet potatoes pair so well with HGHF Chipotle Mayo is one for the books. Also you need to trust me with the combination of the other topping ingredients, you truly are not going to be sorry. My dad who is a firm believer in meat in each dish, actually went back for 3 helpings.
However, where did this recipe idea even come from? I was in Mexico last week and I saw a very sweet recipe using shredded sweet potatoes. The texture & taste was great, however I wanted a savory twist on them! I started thinking of a savory combination with the shredded sweet potatoes and was also craving my Chipotle Chicken Sandwich. Then it hit me… the chipotle mayo with the shredded sweet potatoes. Then bam, started creating! We love wontons and it just all fell perfectly into place! So let’s get started shall we?

What Are Shredded Sweet Potato Chipotle Wontons?
I know you are probably thinking, well what exactly are these amazing things you are raving about? Well the key to a delicious vegetarian dish in my opinion is that it is not only down right delicious, but it fills you up and you don’t even think about the meat! Now coming from a person who loves her steak, chicken etc. I think I can be an unbiased judge, because I am a meat lover. I perfected this filling to where all you want to do is eat it with a spoon. Then with a combination of fresh radishes, cotija cheese, cilantro, lettuce and last drizzle of chipotle mayo. The combination adds such a refreshing combination that pairs so well with the chipotle shredded sweet potatoes!
Ingredients needed for Shredded Sweet Potato Chipotle Wontons:
Garlic, Shallots, Olive Oil & Butter:
One of the best combinations above to start sautéing your shredded sweet potatoes. In your frying pan you will add garlic, shallots & olive oil to the pan. Sauté for 2 minutes. After you will add your shredded sweet potatoes, salt & butter on top. It truly makes for the easiest most delicious taste!
Sweet Potatoes:
Now there are many types of sweet potatoes at the store, so it can get a bit confusing when choosing which one. Not all sweet potatoes taste the same, so the kind we want for this recipe is Beauregard, Jewel or Garnet. 3 most typical relish orange flesh sweet potatoes you’d find in the grocery store. Not only do they all have reddish orange flesh but provide a perfect texture that is perfect for cooking & baking in recipes. Also provide a sweetness in taste that is perfect for the addicting flavor combination of this recipe.
I do not mean to toot my own horn but….. toot toot! This is by far one of the easiest and most delicious Chipotle Mayo’s you will make. We use it all the time on recipes like the one linked above, other sandwiches, salads, fries… you name it! That is why it is truly the absolute perfect pairing with the shredded sweet potatoes. Fresh Radishes:
Now, I use to not like radishes. I use to think of them as the really bitter things that are a magenta color in prepackaged salads…. anyone else? Well it wasn’t until I sliced fresh ones from the produce section, not bagged. GAME CHANGER. Not dry, not too bitter. Crispy, delicious and add the perfect hint of bitterness that cuts through super sweet. Dip them in the chipotle mayo over and over, then thank me later!
Cilantro:
I know there is some sort of gene where you either love or hate cilantro right? Where you think it tastes like soup or not? hahah well I don’t have the cilantro soap gene, I just LOVE it. However, if you need to leave it off like my dad does, by all mean do you!
Cotija Cheese:
Is a Mexican favored cheese. It is salty and milky. It has bene known to be a milder feta!
Romaine Lettuce:
Adds a great crisp to the top!

What Tools Do I Need for Shredded Sweet Potato Chipotle Wontons
Box Grater:
A box grater is key to making shredded sweet potatoes super easy! I love this one because it traps it inside and they don’t go flying all over. Also shredding down relieves a lot of arm muscle strain 😉 This is our favorite one!
Muffin Tin:

Kitchen Knife Set:
You will be chopping up cilantro and slicing thinly the radishes so having nice sharp knives make cooking so much easier!
Frying Pan:

How do you shred raw sweet potatoes?
You shred your raw sweet potatoes using the biggest grater setting on your box grater or grater you have at home. I linked my favorite box grater above! You wash the outside of your sweet potato, peel some of the outside skin, the start grating!
Can you pre shred sweet potatoes?
Sure can! This is a great way to start to prep this meal ahead of time on the weekends. All the little preps can make a big difference during the week. Shred your sweet potatoes like normal. Squeeze a bit of the excess water out with paper towel, leave it wrapped in the paper towel you did squeeze the liquid out in, store in air tight container in fridge for up to 3 days.
How long do shredded sweet potatoes keep?
I would keep them for up to 3 days in the fridge. The finished Shredded Sweet Potato Wontons last 5 days in the fridge.
Does the Chipotle Sweet Potato filling freeze well?
I am actually testing that as we speak and will report back 🙂 I froze half of batch of the filling the 4th time I made them– can’t stop won’t stop! If you want to try before I report back, I would just leave it out in the fridge 1 day before you plan to use it, then proceed with the same process. It might take a bit more for the water to evaporate so your frying in pan time might be a little bit longer. Again I will report back! Also let me know if you do try it 🙂
If I don’t like radishes can I omit them?
I really really urge you to try the combination first then can of course take them off. My dad does not like radishes and I use to not, but he still does not lol. He told me he actually loved them with this recipe, they pair so well. So from a person who use to hate them and someone who still does….. they were a winner for us in this recipe! Again I feel like radishes get a bad rep because they are usually VERY bitter in pre packaged salads. It is not the case for fresh radishes in the bushels in the produce section.

Shredded Sweet Potato Chipotle Wontons
Ingredients
Easy Chipotle Mayo
- 3/4 cup Mayo of choice
- 2/3 cup Greek Yogurt of choice
- 2 tsp Adobo Chipotle Pepper Sauce OR 2 Adobo Chipotle Peppers feel free to add more for spice if you’d like after tasting! both of these can be found in canned food isle
- 1/8 cup lime juice
- 1 tsp sweetener honey granulated cane sugar or granulated monk fruit sweetener works!
- 2 cloves garlic minced
- 1/4 tsp salt
Shredded Sweet Potato Chipotle Wontons
- 1 12oz Wonton Wrappers I use Nasoya
- 4 tbsp HGHF Easy Chipotle Mayo I prep this on the weekend and shred sweet potatoes to make it even FASTER during the week
- 2 medium sweet potatoes ( see above for certain kind) 4 1/2 to 5 cups shredded
- 1/4 cup finely diced shallots
- 3 cloves garlic minced
- 3 tbsp olive oil
- 1 tbsp unsalted butter
- 1 tsp salt
- 1/4 tsp pepper
Toppings
- 10oz cotija cheese needed for baking too
- 1 bushel radishes
- 1 head romaine lettuce
- 1 bushel cilantro
Instructions
Easy Chipotle Mayo
- Place mayo, greek yogurt, lime juice, Adobo Chipotle Pepper Sauce OR 2 Adobo Chipotle Peppers, honey, salt and garlic powder in immersion blender safe container. Immersion blend until smooth. Store in air tight container for up to a week!
Shredded Sweet Potato Chipotle Wontons
- Preheat oven to 400. Wash & srub your sweet potatoes, then peel the sides. With your box grater on the largest setting, grate your sweet potatoes. Should have about 4 1/2 to 5 cups worth. Place paper towel over it and squeeze out a bit of the excess water. Set aside
- In a large frying pan sauté your chopped shallots and minced garlic in 3 tbsp of olive oil on medium heat for 2 mins. Then add in your shredded sweet potatoes. Mix until combine and sauté for 10 minutes, continuing to mix. While it is sauteing add 1 tbsp of butter broke apart on top and 1 tsp salt
- After 10 minutes of sauting add in the 4 tbsp of Chipotle Mayo. Mix well until throughly combined. Cook down 5 more minutes on medium heat.
- In your muffin tins line each cup with 1 wonton wrapper. Put 1 1/2 tbsp of filling in each center. Sprinkle crumbled cotija cheese on top and repeat for each one. Bake for 10 minutes
- To assemble, dollap a bit more chipotle mayo on top after they come out. Sliced radishes on the mayo, a bit more cotija cheese, cilantro & shredded romaine lettuce
- Devour and enjoy!!
