Who else has had a bad relationship with Veggie Burgers? I sure have! I feel like I want to like them, and every time I have them I come up short! From the homemade ones I have made in the past, to the ones I buy at the store or at a restaurant. A lot of times they are either too chewy, dry or have chunks of onions etc. SO I was DETERMINED to create a veggie burger that would make me crave more– super easy and that you all would LOVE and here we have it!! I also was able to whip these together while making lunch for A one afternoon– they are that simple! Let’s make some Quick Guacamole Black Bean Burgers!
Super Easy & Accommodating
Cooking Methods: This recipe has 2 preferred cooking methods. I show you how you can cook it on the stove top or in the air fryer.
Gluten Free: The burger recipe is naturally gluten free. However, feel free to use regular Panko bread crumbs. Also when it comes to the buns, feel free to use your favorite gluten free bun. I also like to go low carb with this recipe too at times and choose to omit the bun. As always, whatever works for you :)!
Dairy Free: The burger recipe is naturally dairy free. You can choose to omit the piece of cheese at the very end or use your favorite dairy free cheese. The guacamole is so great as a creamy topping alone as well!
What Delicious Ingredients are in the Quick Guacamole Black Bean Burgers?
- 2 15 oz cans of spicy black beans drained NOT RINSED
- 1 large carrot shredded
- 3/4 cup GF Panko Breadcrumbs
- 2/3 cup cooked quinoa
- 1 4 oz can of Hatch green chilies drained
- Garlic powder
- Minced onion
- Chili powder
- Cumin
- Salt
- Oregano
How to make the Quick Guacamole
The key to great homemade guacamole is adding in those subtle delicious flavors. I prefer a few more thing than Ainsley does. So I am going to share our classic one that is something EVERYONE devours, then what I also like to sneak in there!
- 2 Ripe Avocados
- 1/4 salsa of choice
- 1 small clove garlic
- Juice of 1/2 lime
- 1/4-1/2 tsp salt
- My first tip to making sure your guacamole stays green longer, especially if you are saving some for lunches for the week is to wait to mash the avocados until you have added the salsa and lime juice on top. Then begin smashing until fully mashed. That way the lime juice is really getting all over the avocado, which helps keep it fresher looking, longer!
- Then you will add in the salt & minced garlic
What I LOVE to add in as well is chopped cilantro, minced fresh onion about 1- 2 tsp & about 1 tbsp of chopped up jalapeño! YES PLEASE. I could eat guacamole 24/7. Anyone else with me?
Best Way to Store the Quick Guacamole Black Bean Burgers
One of my favorite things about these burgers is how easily they are to store for another meal, lunches etc.
After I make the the burgers and divide them out into the patties. I will fry up the ones that I want to eat that night or the amount I want for lunches as well. The ones I am not eating at the moment or that week for lunches, I will do the following:
Take a freezer safe container out that will fit your remaining patties. Then cut parchment paper that will fit over each burger patty, to separate them so they do not stick to each other. I will usually do a layer on the top of two patties, then layer two more on top of the parchment on top.
Options:
- Freeze your patties for another meal next week or other lunches to come
- Place the container in the fridge and wait to fry up the remaining patties for another meal during the week. Also if you work from home, don’t fry them up day of and wait till your lunch time to do so!
- For lunches, take an already cooked patty for lunch, then reheat a lunch time or don’t reheat.. honestly I never reheat my lunch hahah but that is me being lazy too.
How should I cook my patties after they have been frozen?
I still cook the same as below, I just add on about 2 to 3 minutes per side.
Quick Guacamole Black Bean Burger
Ingredients
- 6 whole wheat buns (optional)
- 2 15 oz cans of spicy black beans drained NOT RINSED
- 1 large carrot shredded
- 3/4 cup GF Panko Breadcrumbs
- 2/3 cup cooked quinoa
- 1 4 oz can of Hatch green chilies drained
- 1 tsp garlic powder
- 1 tsp minced onion
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp oregano
Easy Guacamole
- 2 ripe avocados
- 1/4 cup salsa of choice
- 1 small clove garlic
- juice of 1/2 lime (about 3 tbsp)
- 1/4-1/2 tsp salt
- optional: fresh cilantro
Instructions
- Cook quinoa per instructions on the back of the bag, or cook in instant pot. 1 cup of raw quinoa in Instant pot & 1 cup of water. Stir, then shut lid. Lock release valve. Then High Pressure for 1 minute. Naturally release for 10 minutes. When the screen reads LO 10, vent & then once the valve drops, open lid & fluff with a fork. Set aside. ( this could be going on while you are doing the rest below to save time or use leftover quinoa if you cooked it that week too)
- Drain the two cans of black beans but do not rise. Pour the drained beans into a large bowl and take a fork or banana smasher and smash the black beans until they are smashed into a “paste”. There will be some that smash, but still are more piece like and that’s fine. You just want it mashed to where it is more paste like and moldable.
- Add in the bread crumbs, quinoa, drained green chilies and shredded carrot. Take a spatula and combine.
- The add in the garlic powder, minced onion, chili powder, cumin, salt and oregano. Mix until WELL combined. Then portion out your patties. Either 4 large patties or 6 small ones. Make sure you flatten them pretty well & evenly so that they cook evenly.
- After cooking them from a method below, place guacamole on the bottom bun, place your black bean burger on top & dig in! Add tomatos, onions, crispy onion straws– literally whatever your heart desires!
Cooking Method: Air Fryer
- Place in Air Fryer at 380 degrees on the Air Fryer rack that way they don't stick to the bottom. Cook for 18 minutes — 9 minutes on each side. Once it is done, if you are doing cheese, add a slice & then close the lid. DO NOT start it again, it will blow the cheese slice off. Just the warmth of the air fryer will melt it without needing it on again.
Cooking Method: Stove Top
- Add tbsp of olive oil to frying pan and heat to medium heat. Cook on each side 9 minutes. Add more olive oil if you need to when you flip sides. Once there is about 2 minutes left on the last side, add your slice of cheese if you want.
Easy Guacamole
- Add ripe guacamoles to a medium mixing bowl. Before you mash, add the salsa & lime juice. This will help incorporate the ingredients the best to where it won't brown fast– especially next day ( if there is any left!) Then add in the minced garlic and salt. Mash until well combined. Then stir in cilantro if you would like!
