You guys know my love for meal prepping? Well these No Bake Peanut Butter Oatmeal Energy Bites take it to a whole new level. I am telling ya, makes life a million trillion billion times easier through the week. One of the things I love is that I can pull it out of the freezer or fridge. That way it curves any sweet tooth craving I have… or hanger attack. Which lets face it, happens a lot throughout the week after chasing around 25 kids (1 being my actual kid hahah).
That is where these babies come in! They are so simple, so filling, great source of protein & perfect even for that bite after a great workout. I also sneak a little bit of a vegetable serving, because lets face it.. my kid is getting harder to trick.

7 Ingredients Away From No Bake Heaven
- Quick oats
- Creamy peanut butter or nut butter of choice ( only ingredients should be peanuts)
- Maple syrup
- Salt
- Chocolate chunks ( Enjoy Life)
- Collagen
- Carrot
Honest Grub, Honest Foodie Favorite No Bake Snacks:
No Bake Chocolate Peanut Butter Oatmeal Energy Bites
Ingredients
- 1 cup quick oats
- 1 cup creamy peanut butter or nut butter of choice only ingredients should be peanuts
- 3 tbsp maple syrup
- 1/2 tsp salt
- 1/4 cup chopped chocolate chunks Enjoy Life
- 2 tbsp Vital Proteins collagen
- 1 medium carrot grated on large grate setting
Instructions
- In a large mixing bowl add in 1 cup peanut butter & maple syrup, stir to incorporate. Then add in oats, salt, chopped chocolate, collagen, salt & grated carrots. Fold with a spatula until fully incorporated
- Place parchment paper on tray & roll out about 1 tbsp of “dough” for each bite, continue until the “dough” is gone. Then place in freezer for at least 30 minutes. Then transfer to a sealed container & keep in the freezer… in an easy access location 🙂
