I am obsessed with lemon poppyseed anything. Muffins… CHECK. Pancakes… CHECK. Scones… CHECK! The list goes on & on, with all checks next to it. So when coming up with new energy bite combinations, it hit me… well duh Alaina!
So I am so excited to bring to you these simple 8 ingredient energy bites that have the right balance of lemon, that doesn’t over power the almond & are ready in under 10 minutes to pop into the freezer! One of my all time favorite things to have prepped are energy bites. As a mom for my toddler it is a dream to have these prepped & ready to go. Also right after working out, to be able to grab something to tide you over while on the go to the next thing!

Why is Cashew Butter so important in these?
Cashew Butter is so smooth & creamy. It doesn’t have a strong nutty taste like other nut butters. It is perfect for making energy bites that you want the flavor focus to me on your other ingredients. It also creates the best texture… eek just so excited for you to make these.
Now nutrional wise, cashew butter may not have the omega-3 fatty acids, but it is a great source of
+monounsaturated fatty acids
+essential ammonia acids
+magnesium.
These nutrients benefit your blood pressure, cholesterol control, bone health, immune system & metabolism.
No Bake Lemon Poppy Seed Energy Bites
Ingredients
- 1 cup oat flour
- 1 tsp poppy seed
- 1 tbsp lemon zest
- 1 tbsp lemon juice
- 1/2 tsp lemon juice
- 2 tbsp maple syrup
- 1 tsp maple syrup
- 1/2 cup cashew butter
- 1/4 tsp vanilla extract
- 1/2 tsp almond extract
- pinch of salt
To Roll Energy Bites
- 3 tbsp coconut shredded
- 2 tsp lemon zest
Instructions
- 1. In a large mixing bowl add in oat flour, lemon zest, poppy seeds & salt. Whisk together until throughly combined.
- 2. Then pour in lemon juice, maple syrup, cashew butter, vanilla extract & almond extract over the dry ingredients. fold with a spatula until full combined & let sit for 2-3 minutes ( enough time to clean up the kitchen!)
- 3. Line small baking sheet with parchment paper & then pour the shredded coconut & 2 tsp lemon zest onto small plate, mix well with hands. Now take about 1 1/2 tbsp of the batter, roll in hand to create the energy bites. Then roll in the coconut zest, place on baking sheet & repeat for all 8.
- 4. Then place into freezer for 1 hour, then enjoy! Keep in freezer in air tight container for up to 3 weeks or in the refrigerator in an air tight container for a week. All though I guarantee they will not last 1 week or 3 weeks 🙂
