So basically if you aren’t super excited to make these, I am not sure why! You can decide what nut combo you’d like for the clusters, however I love this trio because of what they have to offer. Almonds are great for curving appetite, pecans pack energy & cashews are help aid digestion. Get ready to have the perfect, healthy & delicious snack for any time of the year.
What Nutritious Ingredients Do These Magic No Bake Cookie Clusters Have?
- Pecans
- Almonds
- Cashews
- Coconut Chip Flakes
- Semi Sweet Enjoy Life Chocolate Mega Chunks
- Coconut oil
- Cinnamon
- Coconut sugar
- Large sea salt flakes ( optionals or when I do have them I just sprinkle coarse salt on top )
Do they ACTUALLY hold together?
YES. I know… that is why they are magic!! You’d think that by just drizzling a good amount of chocolate over it and not toss it, how does it do it…

Toss the nuts in coconut oil helps keep these babies from holding together as well as the chocolate. It is very much a team effort with those two ingredients 🙂 Coconut Oil can go from a liquid to somewhat of a solid state as well. Therefore, when you freeze them it works together with the chocolate to bind the nuts. However, you do want to make sure you drizzle a good amount on top to cover it, you don’t have to cover every inch. Just make sure it is evenly drizzled. What Makes these Magic No Bake Cookie Clusters so “healthy” for you?
Why eat nuts? They are a great source of nutrients, antioxidants, aid in weightless ( a snack that keeps you full longer!), help lower cholesterol, low in carbs and don’t raise blood sugar very much, help with inflammation, high in good for you fiber, and been linked to a healthy heart!
However, different types of nuts are going to provide you with more healthy benefits than others. That is why I chose 3 of my FAVORITE healthy nuts for these Magic No Bake Cookie Clusters.
Pecans:
Improve heart health, stabilize blood sugar, good for digestion, boosts immunity, promote brain health, great source of energy and since pecans are packed with fiber and help with getting rid of toxins and waste from your body– they actually help with the appearance of your skin!
Almonds:
Large amounts of nutrients, packed with antioxidants, high in vitamin E which help lower rates of heart disease & cancer, help with blood sugar control, help with blood sugar, lower cholesterol levels and help you full longer.
Cashews:
Boost your immune system, protein rich, wonderful to cook with to make things “creamy”, fatty acids that are GOOD for you– not all fat is “bad” fat! Also a wonderful source of antioxidants.

Magic No Bake Cookie Clusters
Ingredients
- 1/3 cup whole pecans
- 1/3 cup sliced almonds
- 1/3 cup whole unsalted cashews
- 1/3 cup unsweetened coconut chip flakes
- 5 oz Semi Sweet Enjoy Life Chocolate mega chunks
- 1 tbsp of coconut oil for coating the nuts & 1 tsp for melting chocolate
- 1/4 tsp cinnamon
- 1 tsp coconut sugar
- large sea salt flakes optional and if you have coarse sea salt that works too!
Instructions
- In a large bowl add in pecans, almonds, cashews, coconut flakes, cinnamon & sugar. Pour 1 tbsp of melted coconut oil over it & mix until combined.
- Next step is to melt the chocolate. Here are two ways that I do it:
- Stove Top: This way is my favorite way, it ensures no burning & melts perfectly. Fill small sauce pot/pan half way with water. Then pour the chocolate chunks in a microwave safe boil that can cradle the top of the pot. Make sure the bowl does not touch the water but is hovering over it. Then turn heat on high. Add in 1 tsp coconut oil & then with a spatula stir occasionally until chocolate is fully melted.
- Microwave: 1. In a small microwavable bowl add in 1 tsp coconut oil & heat in microwave for 30 second to melt.
- On baking sheet spoon out about 1/4 cup of nut mixture, pushing together the clusters so they are fully overlapping & touching. Then pour the melted chocolate on top of each cluster until fully covered on the top as seen above.
- Sprinkle with sea salt flakes & place in the freezer for 1 hour. Then take out, let thaw for a minute or two before bitting in!
- Store in freezer tight container for up to 2 weeks & pop out when ready for the yummy treat. Also can store in refrigerator in air tight container AFTER freezing, for up to 7 days.
