It is safe to say that the Fried Artichoke Salad at Katie’s Pizza and Pasta is one of the all time favorite salads of people who have been there. I have gotten more requests about creating a copy cat to to this favorite over any other recipe! That is why I knew not only did I need to figure this one out ASAP but try multiple different methods. I knew how important it was to perfect this just for your guys 🙂 If you have not been to Katie’s Pizza and Pasta I highly recommend it. They have delicious drinks, appetizers, pizza and of course pasta. However, sometimes it is nice to be able to make recipes like our favorites in the comfort of our own home as well as save some moolah! So let’s get started on Katie’s Pizza Fried Artichoke Salad Copy Cat already!
What are the Delicious Ingredients We Need for Katie’s Pizza Fried Artichoke Salad Copy Cat
One thing that makes this salad so popular is the delicious combination of unique salad ingredients. Also the balsamic vinaigrette with it, is just chefs kiss.
Spring Mix
One thing I love about this salad are all the flavors that work together, that is why I highly recommend using a Spring Mix. I feel like iceberg & even romaine lettuce can take away from the other flavors in play here.
Plain Goat Cheese
Goat cheese is just down right delicious, could just sit and eat it with crackers all dinner long lol. Rightfully so there are so many flavors of goat cheese out now. However, plain goat cheese or just one with oregano herbs would be the best. You want the goat cheese flavor in this salad but no competing flavors blended with the goat cheese.
Shelled Roasted and Salted Pistachios
I am telling you right now pistachios + goat cheese is heaven. Do yourself a favor and buy a big bag of shelled roasted and salted pistachios at Costco, because you will be making this salad on repeat. They are such good quality and price!
Artichoke Hearts ( I use canned to make this easy!)
One of the signature pieces of the Katie’s Pizza Fried Artichoke Salad is why of course… fried artichokes! Now with HGHF my motto is making delicious recipes, while making it healthier for us. That is where these fried artichokes come in. A lot of times I feel like you can order it and they can be super over done to the point of hard to chew. That is why I was determined to figure out healthier way to “fry” them at home, while not making them too over done. That is where the air fryer comes in! Asparagus
Alright so Asparagus + Goat Cheese + Pistachios + Fried Artichokes… is the ultimate combo. You will have your asparagus cooked on the skillet for this recipe, and it is easy & work perfect!
Balsamic Vinaigrette
One of the first requested copy cats I kept getting was the Dewey’s House Salad Copy Cat. That is where I first perfected HGHF Balsamic Vinaigrette. Therefore, you will be using that same dressing in this recipe and it truly is the best homemade Balsamic Vinaigrette. The Vinaigrette also doubles in a delicious chicken marinade.
How to Make the Katie’s Pizza Fried Artichoke Salad Copy Cat Dressing
One of my favorite things about this salad is how the Balsamic Dressing pairs so well with the other ingredients. The tangy cutting through the nuttiness of the pistachios, Balsamic & Goat Cheese doing a tangy dance… I could go on & on! That is why you cannot waver when making this recipe with store bout Balsamic Dressing. This is it folks, you will no longer be buying after you have this!
BALSAMIC VINAIGRETTE DRESSING
HOMEMADE BALSAMIC VINAIGRETTE:
- 1 cup light olive oil
- 6 tbsp balsamic add more if need be
- 1 large garlic clove minced
- 3 tsp Dijon mustard
- 2 tsp stone ground mustard
- 2 tsp Monk Fruit Sweetener** ( or cane sugar)
- 1/2 tsp honey
- Salt & pepper to taste
Add Ingredients to an immersion blender safe container. Immersion blend until smooth. Immersion blending is key to your dressing being perfect & fully combined. A whisk will not do with dressing like Balsamic Vinaigrette. I ALWAYS use mine for all my dressings, it is well worth the buy.

How do I “fry” these Artichokes in the Katie’s Pizza Fried Artichoke Salad Copy Cat?
One of the things that does make this recipe so easy to make at home is that you use canned artichoke hearts. This is the key to being able to air fry these babies up fast instead of dealing with a whole artichoke. Using the canned is not only efficient but also delicious. You are going to need 2 cans of artichoke hearts linked here for reference.
- Take your artichoke hearts and with a sharp serrated knife you will cut length wise in half as seen on the left of the picture.
- Then you will add each half to a bowl. Gently toss in 1/2 salt, 1/2 tsp garlic powder, 1/2 onion powder and 1/4 tsp pepper
3. Add your halves to your air fryer basket. Spray the tops with oil appropriate for your air fryer.
4. Air Fry at 400 degrees for 10 minutes. Flipping them at 5 minutes then spraying again.

You can, but let me tell you this one tastes as close as you can get to the real deal. It is honestly my favorite Balsamic Vinaigrette, so it is way better than the store bought! Worth it to make. It is very easy!
Can I make the asparagus and the artichokes the day before?
You can, but take note they won’t be as cripsy the next day, which does not bother me though! I pack it for my lunch for the next day, still tastes so good. Just put the dressing in a side container & drizzle it on right before you are ready to eat.

You can store the dressing in an air tight container mason jar. Then the remaining ingredients like the artichokes & asparagus in an air tight container.

I think chicken would be wonderful on this! Marinade the chicken in the balsamic vinaigrette… oh man!
If I don’t like goat cheese is there another cheese you’d recommend for the salad?
I would say another type of creamy tangy ish cheese you could try would be feta! That would be the best bet. Blue cheese might be good with it as well :)!
Katie’s Pizza Fried Artichoke Salad Copy Cat
Ingredients
- 2 10 oz containers of Spring Mix
- 2 14 oz cans of artichoke hearts
- 1 bushel of asparagus
- 1 1/2 cups of shelled roasted and salted pistachios
- 12 oz of plain goat cheese
- 1 tsp salt
- 1 tsp galic powder
- 1 tsp onion powder
- 1/2 tsp pepper
Balsamic Vinaigrette Dressing
- 1 cup light olive oil
- 6 tbsp balsamic add more if need be
- 1 large garlic clove minced
- 3 tsp Dijon mustard
- 2 tsp stone ground mustard
- 2 tsp Monk Fruit Sweetener** or cane sugar
- 1/2 tsp honey
- Salt & pepper to taste
Instructions
Balsamic Vinaigrette
- In immersion blender container add 1 cup light olive oil, 6 tbsp balsamic, 1 large garlic clove minced, 3 tsp Dijon mustard, 2 tsp stone ground mustard, 2 tsp Monk Fruit Sweetener** ( or cane sugar), 1/2 tsp honey, salt & pepper to taste. Blend until creamy
Assembly Katie’s Pizza Fried Artichoke Salad Coy Cat
- You will start on your artichokes, take your artichoke hearts and with a sharp serrated knife you will cut length wise in half as seen on the left of the picture.
- Then you will add each half to a bowl. Gently toss in 1/2 salt, 1/2 tsp garlic powder, 1/2 onion powder and 1/4 tsp pepper Add your halves to your air fryer basket. Spray the tops with oil appropriate for your air fryer.
- Air Fry at 400 degrees for 10 minutes. Flipping them at 5 minutes then spraying again.
- While artichokes are cooking, add 1 tsp of olive oil to medium frying pan, heat to medium heat and add in your asparagus ( with the ends of the stalks trimmed)
- Sprinkle with the remaining garlic powder, onion powder, salt and pepper. Cook for 8 minutes continuing to flip occasionally.
- Once artichokes & asparagus are cooked, place spring mix in bowl. Top with asparagus, artichokes, pistachios and break apart goat cheese on top. Drizzle the Balsamic Vinagriette on top and devour!

I used to go to Katie’s Pizza when it was on Clayton Road. My favorite menu item there was her Tuscan grilled shrimp salad atop greens with clementines, pistachio, parm, kalamata olives… I make my own version at home (minus shrimp to keep it vegetarian). This salad is another fantastic combo of ingredients. Thanks for the copycat recipe!! It was delicious. Since I don’t have an air fryer, I roasted the asparagus and artichoke which worked perfectly. I plan to make this recipe again and again!
