You sit down at dinner after spending a good amount of time making it and dive in! Yes, it took you a little bit to make it, but how about each ingredient you used? It had to come from somewhere right? The pasta, the cheese, the milk, the butter, the salad, the olive oil, the seasonings. Holy cow. Now all of a sudden there is quite a crew who helped get your dinner ready.
Tonight at dinner I want you to stop and look at your plate. Have you ever thought about what moving parts had to occur in order for you to have the meal that you are sitting down and enjoying? Honestly, there are so many pieces of the puzzle we are very unaware of! We can’t even begin to imagine & thank all the people that it took to make, distribute etc. all the ingredients. Especially right now, with jobs & conditions being impacted heavily. Nevertheless, there are people out there doing whatever it takes to nourish our bodies with quality ingredients.

That is why I partnered with Midwest Dairy this summer to bring to you a delicious, nutritious, healthy & easy recipe. Midwest Dairy represents approximately 5,800 dairy farmers, farmers who are resilient & dedicated, rain or shine! Every day they work so hard to provide us with the nutritious ingredients that we use to make our nutritious meals we see on our plate! Take a look at this video Reshaunda Thornton created. She is a registered dietitian who went to visit Scheer Dairy Farm this last year. She discovered what it takes to run a dairy farm & all the care put into getting milk on our shelves! The Scheer family is amazing & I have had the privilege of getting to know them this past year. They work so hard & this video is such a great depiction of the process! So it got me thinking, which is always a good thing or a bad thing 🙂 I wanted to create a recipe that could be so simple, easily attainable, easy to dress up or down and as we are about to approach the Fall with so much unknown, I wanted a recipe you know you can make with ease, packed with nutrition & low price point. Therefore, I bring you an Instant Pot Simple Creamy Tomato Herb Pasta— oh yes baby, yes! This recipe requires lots of great pantry staples & your dairy staples most of us have in the fridge already or are easily attainable thanks to all the amazing hardworking farmers in our communities. It also comes together in under 30 minutes with lots of hands off time.
I mean, what could be better? Let’s get started!
So what ingredients do we need for this nutritious meal?
- Pasta ( have a GF pasta like Lentil Pasta cooking instructions & Regular Pasta instructions)
- Butter
- Milk
- Chicken Broth
- Pasta sauce
- Cream Cheese
- Fresh Herbs
What can I add to the pasta?
This recipe I make with red lentil pasta, however you can use regular pasta too. Ainsley isn’t the biggest fan of meat so the extra plant based protein in any meal is a win for us! A lot of times that I have made lentil pasta it can have a weird texture, however with the Instant Pot & how you cook it with this recipe– it is perfect!
I wanted this recipe to be very simple and a recipe that you could find the ingredients conveniently, especially when we head into Fall, unsure if we will shut down again etc. However, feel free to add:
+ Fresh Garden Veggies
+ Chicken
+ Ground Beef
+ Shrimp

Instant Pot Simple Creamy Tomato Herb Pasta
Equipment
- Instant Pot
Ingredients
- 8 oz Red Lentil Pasta Regular Pasta works well too!
- 1 1/4 cup chicken broth
- 1 1/4 cup milk
- 1 tbsp unsalted butter
- 1 1/2 cup pasta sauce
- 1 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp chili powder
- 1/4 tsp pepper
- 4 oz cream cheese
- 1/4 cup fresh basil & oregano tsp dried basil + 1/2 tsp oregano if you do not have fresh herbs.
Instructions
- In Instant Pot pour 8 oz of dried pasta in the insert. Pour chicken broth on top & milk. Then cut up the 1 tbsp of butter and break apart on top of the chicken broth
- Pour 1 cup of pasta sauce on top & stir with the ingredients from above. Then sprinkle ½ tsp salt, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp pepper & ¼ tsp chili powder. Do not stir in, just sprinkle the seasoning on top.
- Cook on high pressure for 7 minutes for lentil pasta & 6 minutes for regular pasta. Then once your Instant Pot reads LO 00 & is beeping because the time is up, you do not want to naturally release at all, you want to immediately quick release.
- After the valve has dropped, release the lid safely and give the pasta a stir. Then add in cream cheese cut into about 4 sections & remaining pasta sauce & cream cheese in about 4 cut up blocks. Turn your Instant Pot on sauté function and begin stirring in the pasta sauce and cream cheese until fully melted and incorporated.
- Then add in the chopped fresh herbs and give it a stir to incorporate as well.
- Then place in bowls, sprinkle with a little bit more herbs on top. Then serve with French baguette or large salad! This will be your easy, go-to dinner recipe & cannot wait to see you all make it!
