Alright, I am very, fully, obsessed with these High Protein Cheddar Corn Fritters. I made them so many times to make sure the seasons were just right, the texture wasn’t too dry & not too wet. Well long story short… we have reached perfection and I cannot wait to share these with you guys! One thing I love about these is how versatile they are. We ate them as a side with our chili the other night and I also added eggs on top of them for breakfast the next day.
We. Cannot. Get. Enough! My second favorite thing about these High Protein Cheddar Corn Fritters, is the PROTEIN. These babies are packed with protein thanks to Kodiak Cakes new Power Flour. In 1/4 cup of that flour, there is 10 grams of protein. That means there are about 5 grams of protein per fritter. Get ready for a delicious healthy side, breakfast, lunch… whenever you want to have it, recipe!
Where does the term “fritter” come from?
A fritter is defined as any meat, seafood, fruit or vegetable that is battered & deep fried. They can be made both sweet & savory. However, with these High Protein Cheddar Corn Fritters, we are ditching the deep fryer & using the frying pan. This fritter recipe is also a savory fritter recipe.

Every ingredient in these fritters are the perfect blend with one another. Chive & cheddar flavor with the sweet corn is so delicious! Ainsley is skeptical of anything green, so you can see where this could have been a problem. However, these add just the right flavor without even knowing you are eating “chives that are green,” if you know what I mean!
High Protein Cheddar Corn Fritters Ingredients

shredded mild cheddar 1 cup
frozen sweet corn 1 cup
1 egg
2/3 cup milk
2 tbsp oil
2 tbsp chopped fresh chives (use kitchen shears to “chop” much more efficient & easy way!)
1 1/4 tsp salt
1 tsp baking powder
1/2 tsp garlic powder
1/4 tsp cayenne powder
1/4 tsp onion powder

Mixing Spatula: you want to make sure all the ingredients are incorporated well, so you will use a mixing spatula to get all the batter off the sides of the bowl as well

These are one of my favorite things to have as a side dish. These flavors go with so many delicious things from soups, to salads to a great addition to a protein dish. Let’s brain storm some ideas below!
Chili: these corn fritters are the perfect side dish for chili. To be honest I am not the BIGGEST fan of corn bread.. which my family loves with chili. I started having these with my chili instead & I have won my family over with that idea. They taste SO good dipped into the chili. This is a must try combination
Soups: Having these fritters as a side with soups is very similar to the method behind why you need them for your chili. The fritter soaking up the broth is absolutely delicious. For example dipping the fritters in the Instant Pot Chicken Noodle is down right yummy.
Salmon: ditch the baked potato next time you grill up delicious salmon and have a grilled veggie, paired with these fritters. A bite of the salmon at the same time as the fritters is the perfect flavor combination
Eggs: This is by far one of my favorite combinations. I am 100% a savory breakfast person. Therefore this is an absolute epic combo I have had 3 times this week for breakfast. Pop your already made High Protein Cheddar Corn Fritters in the toaster oven, while you cook up your fried eggs. Top you fritters with the fried egg cooked to your liking and devour

How to make High Protein Cheddar Corn Fritters
Like I mentioned above there are so many reasons I love this recipe, but one that is very important to make sure I repeat. This recipe is easy to MAKE & easy to CLEAN UP. That in itself is a big enough reason to make them yourself. So let’s see just how easy it to make shall we?
- In a large mixing bowl sift your Kodiak Cake Power Flour then add in the rest of your dry ingredients: baking powder, salt, garlic powder, cayenne pepper, onion powder, shredded cheddar & chives. Take a fork & whisk until full incorporated
- Pour in your milk, oil and egg. Take your mixing spatula & fold until fully incorporated, but do not over mix, just once all the mixture is “wet.”
- Next fold in your corn & set aside.
- Heat 2 tbsp oil on your frying pan at medium heat. Cook each side for 3 to 4 minutes, each side will be crispy brown. Place on a plate with paper towel to soak up any excess oil. Then serve!
*** only have the bowl you mixed it with & the frying pan to clean up. Winner!

Common Asked Questions when making High Protein Cheddar Corn Fritters
Do I have to use cheddar cheese in the High Protein Cheddar Corn Fritters?
You don’t have to use cheddar, however I highly recommend it. In a dish like fritters, it is very flour based and therefore you need to have stronger flavors in order to taste anything through it. Therefore, if you don’t have a strong cheese like cheddar, you won’t even taste the cheese in it. That is why I really recommend cheddar!
My family is not a big fan or chives, can I omit them?
I would say try it with it & next time you can always omit. The chives add a nice flavor combination with the cheddar without it being overbearing or chewing a bit and knowing a chive is in there if that makes sense? Chop them super fine too if they are really aware of them.

Can I deep fry them, even though the recipe does say to?
I have not tried that and so I do not have the exact times or method of doing so. However, if you are confident in deep frying try it and please let me know what ended up workin!
Are these easy to adapt to dairy free?
I have not tried these dairy free. However I assume you can use DF milk & DF cheese, but not sure the consistency or taste change. If you try please let me know.
What is the best way to store High Protein Cheddar Corn Fritters?
Cook them & then store them in an air tight container in the fridge for up to 5 days. To reheat put in your toaster oven for about 1- 2 minutes at medium setting ( it is 2 out of 4 on our toaster oven) on each side
