In this recipe I show you guys how I enjoy to serve the Healthy Mediterranean Tuna Stuffed Peppers– in roasted sweet yellow peppers! However below I will share other ways that we enjoy to serve it.
Roasted Yellow Pepper Boats:
I actually do not like stuffed pepper recipes, because a lot of times the peppers can be too over powering or you spend more time chewing and swallowing them than the actual main recipe. However, these yellow peppers a different game changer. Yellow peppers are sweeter than red or orange, so give the perfect flavor combo with the Mediterranean Tuna salad. Also roasting them before you stuff gives them a softer consistency which makes them easier to chew with the tuna salad. The yellow peppers are not overpowering at all, perfect!
Cut Da Carb Wrap or Tortilla:
Cut Da Carb is one of our favorite low carb options for wraps, quality ingredients and so delicious. We love tortillas in the family, and have recently chosen to go more gluten free route, so a lot of the cassava flour tortillas work really well with this tuna salad as well!

- 3 cans of Wild Planet Food no salt added albacore tuna
- Sliced Kalamata Olives (1/3 cup)
- Sliced tomatoes (1/3 cup)
- Chopped cucumbers (1/3 cup)
- Crumbled feta (1/3 cup)
- 1 tbsp red onion
- 1/2 tsp salt & dill
- 1/4 tsp dried oregano & dried basil
- 1/4 cup lemon juice
- 4 tbsp mayo
- 2 tbsp greek yogurt
- 2 tbsp light olive oil
- 1/2 tbsp dijon mustard
- 4 yellow bell peppers ( makes 8 halves)
- Italian Cheese mix to top with (optional)

That is such a good question! I have never used anything but canned tuna, but I feel like that sounds like a wonderful idea, and don’t see why not! Please let me know if you try it that way!
Healthy Mediterranean Tuna Stuffed Peppers
Ingredients
- 3 5oz cans of no salt added in water albacore tuna
- 1/3 cup sliced Kalamata Olives
- 1/3 cup sliced tomatoes
- 1/3 cup chopped cucumbers
- 1/3 cup crumbled feta
- 1 tbsp red onion
- 1/2 tsp salt & dill
- 1/4 tsp dried oregano & dried basil
- 1/4 cup lemon juice
- 4 tbsp mayo
- 2 tbsp greek yogurt
- 2 tbsp light olive oil
- 1/2 tbsp dijon mustard
- 4 yellow bell peppers makes 8 halves
- Italian Cheese mix to top with optional
Instructions
- Preheat oven to 375 degrees
- In a large mixing bowl whisk lemon juice, mayo, greek yogurt, olive oil and dijon mustard together until fully combined.
- Add drained tuna on top & mix well with a spatula. Then add in kalamata olives, tomatoes, cucumbers, feta and onion. Mix again until thoroughly combined
- Sprinkle with salt, dill, oregano and basil. Mix well again.
- Slice peppers in halves & deseed them. Spray with olive oil & sprinkle with salt. Bake at 375 for 10 minutes
- Take tongs & flip over the pepper halves to drain any water from baking. Then fill each half, top with cheese & broil for 3 minutes. Then dig in!!
- I love them cold after baking, so I will throw them in my lunch box for the next few days!
