Believe it or not I use to hate sweet things in my salad, however I am loving the sweet tangy combos now! I think I knocked it before I really tried a good one and now I just can’t go back. This salad is packed with healthy clean ingredients that make this a delicious lunch or dinner, while being healthy.
School has started back up for me, which means little time for a life hahah. That is why I need some of these lighter Fall recipes in my back pocket… so to speak lol, that will have my body feeling good, when I am not able to move it as often
Why Making Your Own Salad Dressing is the BEST for you
If you guys have been following me for awhile, you know my strong belief of only making your own dressings. Making your own salad dressing eliminates all the additives, bad low fat artificial flavors & ingredients, not to mention all the SUGARS that are hidden in dressings.
However, even though olive oil is good fat, that can be a lot of fat in your dressings. My goal is to try to cut down on the fat content and provide a creamy dressing that is both a healthy choice & delicious choice. TADA, meet Pumpkin Maple Dijon Dressing! You will be making this dressing constantly throughout the weeks to come for this healthy fall harvest salad, I know we have been!
This is perfect for lunches for the week, easy dinners and or side salad for your delicious meals!

What will you need for this delicious Healthy Fall Harvest Salad dressing?
Pumpkin Puree
Maple Syrup
Grape seed oil ( or light olive oil)
Apple Cider Vinegar
Garlic
Salt
Pepper
Dijon

Fall Harvest Salad with Pumpkin Maple Dressing
Ingredients
Pumpkin Maple Dijon Dressing
- 2 tbsp Pumpkin Puree
- 1 tbsp pure maple syrup
- 3 tbsp grape seed oil or light olive oil
- 3 tbsp apple cider vinegar
- 1 tsp dijon mustard
- 1/2 small clove garlic minced
- 1/2 tsp salt
- 1/4 tsp pepper
Healthy Fall Harvest Salad
- Serving: Makes 4 Salads
- Healthy Fall Harvest Salad
- 32 oz mixed greens
- 1 cup cooked farro per box/bag instruction
- 1 cup dried unsweetened cranberries
- 2 gala apples sliced thinly the thinner the better in salads!
- 3/4 cup feta cheese crumbles
- 1/2 cup pumpkin seeds
- 3/4 cup toasted pecans
Instructions
Fall Harvest Salad
- Layer your salad with ingredients above and then drizzle the Pumpkin Maple Dijon Dressing on top and you are good to go!! For lunches, pack dressing on the side and that way it doesn’t get soggy during the day before lunch. This salad is sure to be a favorite!
For Toasted Pecans:
- On your skillet layer your pecans and on medium low heat, toss the pecans until they become toasty brown & you can smell it starting to toast about 5-10 minutes.
Pumpkin Maple Dijon Dressing
- In a immersion blender safe container, add all the ingredients above. Then immersion blend until creamy– about 10 seconds. Then pour into dressing container and chill until ready for your salad! Last up to 2 weeks in the fridge.

This recipe looks absolutely amazing and I’m hoping to make it for my husband this weekend. However my husband is allergic to pecans. Would you recommend replacing with almonds (or any other nut), or simply omitting the pecans? Thank you!

This dressing is so good! I didn’t think I was going to like it as much as I did. I also added a teeny bit of pumpkin spice to it – tasted just like fall!!
