- 1 cup Frozen Corn
- 1/2 cup chopped jicama
- 1/2 cup finely chopped red bell pepper

Healthy Chopped Avocado Corn Dip
Ingredients
- 1 cup Frozen Corn
- 1/2 cup chopped jicama
- 1/2 cup finely chopped red bell pepper
- 2 deseeded and finely chopped jalapenos
- 2 large whole avocados ripe but not mushy, want to be able to still cut into small bite sized chunks that will hold shape when mixing
- 1 large garlic clove minced
- 1/2 tsp salt adjust to taste
- Juice of 2 limes or 1 large lime adjust to taste
Instructions
- In a large resealable container add 1 cup frozen corn
- Then add in your finely chopped jalapenos & red pepper. As well as your bite sized pieces of chopped jicama.
- After add in your minced garlic and give the ingredients a mix
- Next add in your avocados chopped into bite size pieces, salt & lime juice
- Give it a gentle mix until all is incorporated.
- Try not to eat immediately and place in the fridge to let flavors meld. However that is VERY hard, and you can also eat right away.
- Enjoy with veggies or our favorite gluten free Siete tortilla chips!
