What Healthy Ingredients are in this Healthy and Easy Caramelized Banana Split
Banana splits have ice cream right? Well this recipe has its own delicious “ice cream” in the center. Let me tell you it is down right delicious and easiest “ice cream” you will make! Not to mention jam packed with protein. Then you will toast some pecans and caramelize your banana– but it all together and BAM!
3 Ingredient Peanut Butter “Ice Cream”
- 1/2 cup Greek Yogurt
- 1/2 cup Creamy Peanut Butter
- 3 tsp honey
- pinch of salt
Healthy and Easy Caramelized Banana Split
- 1 ripe banana ( You want it to be JUST when it starts to get a few brown spots, since you are caramelizing it you want it to still be able to hold its shape when cooked in frying pan)
- 1/2 cup raw pecans
- 1⁄4 cup chocolate chips
- 2 tbsp coconut oil
- 1 tbsp coconut sugar
- 1 tsp cinnamon
How Do You Make the Healthy and Easy Caramelized Banana Split?
- In a medium sized bowl pour in honey, peanut butter & greek yogurt. Take spatula & mix until thoroughly combined. You will notice it starts to thicken, which is what you want. Then pour in chocolate chips, and fold them in. Refrigerate for 30 minutes.
- While the “ice cream” is chilling, add 1 tbsp coconut oil to medium sized frying pan & turn on heat to medium high. Then once it has heated for 2 minutes, turn down to medium heat. Add in the pecans. With a spatula coat the nuts in the coconut oil. Then sprinkle 1⁄2 the coconut sugar & cinnamon over the nuts. Then toss them in the seasoning as well. Keep toasting & toasting them for 3-5 minutes, until browned. Then transfer to a bowl to cool.
- In the same frying pan, wipe out with a towel, then add in the last tbsp of coconut oil on medium heat. Next slice the banana in half horizontally, so you have 2 long halves. Then place them banana halves inside down first in the frying pan. Then sprinkle coconut sugar & cinnamon on top, cook for 30 seconds. Then flip so the inside part is now facing up. Sprinkle with coconut sugar & cinnamon, cook for 1 minute. Then flip to the other side one more time & cook for 1 minute. Then take the pan off the heat & let cool in the pan for another minute.
- Now you will assemble! Place banana halves toward the outside of the bowl. Then scoop 2 spoonfuls of the peanut butter yogurt mixture in the middle of the caramelized bananas. Sprinkle with toasted nuts, more chocolate chips & enjoy!

Yes you can! It keeps for up to 5 days in the refrigerator. It keeps that creamy consistency while being in the refrigerator so make it ahead of time on the weekend and be set for anytime you crave it during the week. Could even skip the caramelized banana & just eat that!

You can totally make some complete bowls and put Saran Wrap on them. However, it won’t be AS good as it is warm.. but it still is wonderful!
Can this recipe be made dairy free?
This recipe uses dairy greek yogurt, but if you used dairy free Greek Yogurt you love I don’t see why it couldn’t!
Do you have to use coconut sugar or can you use cane sugar?
Use whatever sugar works best for you! It just needs to be able to caramelize the banana when added to heat.
