Making Creamed Spinach Isn’t Hard
I use to think that making creamed spinach was hard and time consuming– however it is not! This Gruyere Creamed Spinach is put together so fast and you don’t have to worry about steaming or straining your spinach ahead of time!
What ingredients will you need?
- shallots
- garlic
- smoked gruyere
- butter
- all purpose flour
- half and half
- chicken broth
- chopped spinach
- ½ tsp salt
Tip: You can always make the creamed spinach ahead of time and reheat before you put it on the salmon

Grilled Salmon Marinade
Around the holidays our main dishes tend to center around ham or turkey. However, feel free to mix it up with this delicious salmon! Salmon is such a great source of protein and omega 3 fatty acids. So paired with the creamed spinach we are looking at the best pairing!
- salmon cut into 4 filets
- garlic ghee
- garlic cloves, minced
- salt
- minced onion
- tsp paprika
- tsp tarragon
- tsp pepper
Cut into (4) 6 oz filets and place in baking dish
Brush the melted garlic ghee on top of each filet
Sprinkle seasoning on top of each filet
Then get ready to grill or pan fry!
How to Cook the Salmon
Grilling Instructions:
First set the grill to medium heat. Put the skin side down for about 4 minutes. Then turn the heat down a to medium low heat. Flip the filets over and pull the skin off with the tongs slowly. Then sprinkle with a little bit of salt and pepper. Cook for another 4 more minutes on that side at medium low heat. Next turn it over on the original side for 2 more minute and then orginal skin side 2 more minute.
Pan Seared Instructions:
Place your salmon skin side up into the frying pan with the garlic with garlic ghee. Cook on that side for for 4 minutes. Flip ( using tongs or spatula, I find tongs can break it apart easier, which we don’t want so just be cautious) Cook skin side for 4 more minutes ( 5 for more well done salmon). Feel free to keep on longer or take off sooner, it really matters to your preference. Take salmon off & flip it onto the plate with skin side up. Then you will be able to easily peel the skin off the backside of the salmon. Then with the spatula scrape away the excess gray from under the skin.

Grilled Salmon with Gruyere Creamed Spinach
Ingredients
Potatoes:
- 1 pound fingerling potatoes
- 1 tbsp rosemary
- 1 tbsp garlic ghee
- 1 tsp salt
- ½ tsp paprika and garlic powder
- ¼ tsp pepper
Salmon:
- 2 lbs salmon cut into 4 filets
- 1 tbsp garlic ghee
- 2 garlic cloves
- 1 tsp salt
- 1 tsp onion
- ½ tsp paprika
- ½ tsp tarragon
- 1/ t tsp pepper
Creamed Spinach:
- ⅓ cup shallots
- 3 cloves garlic
- 1 cup smoked gruyere
- 1 tbsp butter
- 1 tbsp all purpose flour
- ½ cup half and half
- ¾ cup chicken broth
- 4 cup chopped spinach
- ½ tsp salt
- ¼ tsp tarragon
- 1/4 tsp paprika
Optional Ingredients
- Cherry tomatoes to slice for on top of the creamed spinach
- Extra gruyere cheese to sprinkle on top of the fingerling potatoes
Instructions
- Preheat oven to 425 and line a 9 X 11 baking sheet with parchment paper. Then cut up fingerling potatoes into bite sized pieces and add to large mixing bowl. Pour melted ghee on top
- Next chop up the fresh rosemary and add to a small bowl with the rest of potato seasoning: salt, paprika, garlic powder and pepper. Sprinkle over the fingerling potatoes and toss until evely coated.
- Pour the fingerling potatoes in an even layer on the baking sheet. You will bake the potatoes the rest of the time while the salmon and creamed spinach is going. It will be about 25 minutes.
Creamed Spinach Instruction
- In a frying pan add in butter, garlic and shallots at medium heat for 2 minutes. Add in the flour and with a spatula mix in with the butter, garlic and shallots. Cook for 1 minute.
- Add in 1/2 cup of half and half. Then 1/4 chicken broth. Stir in to incorporate, then pour in 1/4 cup more chicken broth. Then turn down to a simmer. Add in shredded gruyere cheese, continue to mix in to melt.
- Next sprinkle the tarragon, salt and paprika. Mix spices into the creamed cheese mixture. Then gradually incorprate 1 cup of chopped spinach at a time. Continuing to mix into the creamed cheese. Until the spinach wilts and thickens about 4 minutes. Can turn on warm/low until ready to top on salmon or off heat.
Grilled/Pan Seared Salmon Marinade
