I am obsessed with this soup, plain and simple! You will find me all Fall & Winter long making soups in the crock pot for easy dinners. I love making soup on the weekend for easy dinner throughout the week. I also LOVE being able to cook the soup in my crock pot, leave it simmering all afternoon and having that hands off time! Now, when I asked what was a soup that you wanted to see on HGHF a lot of you mentioned potato soup needing its times to shine. I could not agree more! Also a lot of you enjoy gluten free recipes as well as soups in crock pot, so I got to work being able to check those boxes with this recipe. Let me tell you, you will NOT be disappointed! How is this Crock Pot Potato Soup So Creamy & Gluten Free?
A lot of times when we make soups we need to add a roux to make it nice & creamy. The roux normally has a flour base with the butter, then whisk in your milk or half & half etc. However, you don’t need that to make this recipe hearty, creamy and delicious. The thing about potatoes is that it provides a perfect thickness when blended. The key to making this recipe creamy & gluten free is once it is:
Blending HALF of the soup in high power blender
Yes! Promise you. This will still give it a great consistency with pieces of potatoes you did not blend, and then half blended will then get thicker as it sits. The night of it will still be thinner, but once you let it sit over night to serve later in the week for another meal it has fully thickened. We love it both consistencies. Cannot go wrong with this soup! Also it gives it a lighter & healthier kick to it without needing to weigh it down with the roux.
What Are the Two BIGGEST Game Changers in this Gluten Free Crock Pot Potato Soup?
I am all for throwing ingredients in the crock pot & walking away. However with some things like soups, big pieces of meat etc. it makes ALL the difference to spend a few minutes before hand sautéing veggies or searing meat or even seasoning the meat. So trust me when I tell you doing these 2 things makes this Potato Soup better than any other one you have had
Seasoning the POTATOES before putting them in:
Potatoes soak up so much of their seasoning, they also can be pretty bland at times if not seasoned properly. That is why it is SO key to season your veggies before you put them into the soup, because it will give the potatoes and the broth that extra flavor! Trust me on this, you do not want to skip this step at all when making Gluten Free Crock Pot Potato Soup!
Sautéing Bacon, Onion & Garlic:
This is also a major flavor MUST. You could put bacon, onions & garlic in the crock pot without sautéing first. However, I highly recommend you don’t. Sautéing the chopped bacon in the onions and garlic gives it a chance to enhance the flavors. Then you pour it over the top of the potatoes in the crock pot! Seriously… you can’t not do it! It is beyond delicious.

Now do not get discouraged by the ingredient list for Gluten Free Crock Pot Potato Soup. Why? Because most of it is SEASONING. That is SO key to a potato soup, because like I said potatoes soak up so much of the seasoning, it takes a lot to make it POP with flavor. So do not get discouraged by the list, because if you look closely they are the SAME seasonings 🙂
Season Potatoes
- 24 oz Yellow Creamer Potatoes
- 2 tbsp olive oil
- 1 1/2 tsp salt
- 1/2 tsp dried dill
- 1/4 tsp celery seed
- 1/4 tsp pepper
- 1/8 tsp cayenne pepper
Sautéing Bacon
- 4 strips bacon
- 1/2 yellow onion
- 3 cloves garlic minced
- 3 tbsp unsalted butter
- 1/2 tsp salt
- 1/2 tsp celery seed
- 1/4 tsp cayenne pepper
- 1/8 tsp pepper
After you have blended it & poured back into Crock Pot. Whisk in the following
- 1/3 greek yogurt
- 1/2 cup cheddar cheese
- salt, celery seed, pepper, dill and cayenne to taste
How EASY is the Gluten Free Crock Pot Potato Soup
There are a few mini steps, so it does not take long! They are also not hard steps. You got this in no time. You are so close to your new favorite soup!
Season Potatoes
- Dice up your creamer potatoes into small bite sized pieces. Then toss them in the olive oil, salt, dried dill, celery seed, pepper and cayenne pepper
Sautéing Bacon
2. Cut up your strips of bacon in small bite sized pieces
3. In frying pan add butter and heat at medium heat. Sauté minced onion and finely chopped onion. Add salt, celery seed, cayenne pepper and pepper, sauté for 2 minutes.
4. Then add your chopped bacon. Sauté for 5 minutes. Occasionally stirring.
5. Pour seasoned potatoes into the Crock Pot, the pour your sautéed bacon mixture on top of the potatoes. Then pour the chicken broth on top. Cook on high for 4 hours
6. Once the 4 hours is done. Pour 1/2 of your soup with measuring cups into a high power blender. Blend until creamy smooth and pour back into the crock pot. Stir to combine
7. Lastly add in the Greek Yogurt and cheddar cheese, whisk until fully incorporated. Then put on low for 30 minutes. Then serve! Top with crumbled bacon, shredded cheese and sour cream!

Do I have to use creamer potatoes?
You don’t have to use the creamer potatoes, however you want to use yellow potatoes or new potatoes, something with a creamer consistency. That will give it the best texture!

Yes, you can cook the soup 4 hours on high or 6 hours on low.
What is the best way to store the Gluten Free Crock Pot Potato Soup?
The best way to store Gluten Free Crock Pot Potato Soup is to store in air tight container. Then you will store in the fridge for 3 to 5 days. To freeze the soup, place in freezer safe container and thaw out in fridge one day before eating. Then add to deep sauce pan, turn stove top on low and continue to mix the soup until thawed and ready to eat.
Gluten Free Crock Pot Potato Soup
Ingredients
- 48 oz low sodium chicken broth
- 24 oz Yellow Creamer Potatoes
- 2 tbsp olive oil
- 1 1/2 tsp salt
- 1/2 tsp dried dill
