What Simple Ingredients Do I Need to Make Gluten Free Broccoli Chicken Cheese Casserole

Ingredients:
3 cups rotisserie chicken
10 oz chopped raw broccoli
1 cup superfood mix or quinoa
2 blocks of 8 oz cheese ( Cheddar + Havarti is our favorite mix!)
½ yellow onion
4 cloves garlic
2 tbsp tapioca flour
1 cup chicken broth
1 can of cream of chicken soup
⅓ cup sour cream or Greek yogurt
¼ cup mayonnaise
1 ½ tsp salt
1 tsp oregano
½ tsp paprika & pepper
2 tbsp olive oil
Breadcrumb Topping
1 ½ Gluten Free Breadcrumbs
2 tbsp unsalted butter
How Easy is it to Make the Gluten Free Broccoli Chicken Cheese Casserole
There are 3 things that help make this week night dinner super easy to make. One is using Rotisserie Chicken– shortening the time of making the recipe! Second thing I love about how easy this recipe is the simple cheese sauce, just whisk the ingredients together over heat for a few minutes and you are done. Lastly I love how it makes a big 9 X 13 pan so you have enough for leftovers– 2 meals in 1 is a weeknight win. Cannot go wrong with this one!
Preheat oven to 400 degrees
- Chop your yellow onion & mince your garlic. Then set aside
- Grate your 2- 8oz of cheese and set aside
- Cook quinoa or supermix per bag directions then set aside
- In a large bowl whisk together chicken broth, cream of chicken soup, sour cream or Greek yogurt, mayonnaise, salt, oregano, paprika and pepper. Then whisk in half of the shredded cheese you set aside above.
- In a large skillet add 2 tbsp of olive oil and heat on medium heat. Add in chopped onions and garlic. Saute for 3 minutes. Then add in 2 tbsp tapioca flour, toss garlic and onion in it, heat for 2 more minutes.
- Pour in your cream of chicken soup mixture from above, and with a whisk, continue to whisk the sauce until it thickens and cheese is melted. Then set aside.
- Grease 9 X 13 baking dish, add in chopped rotisserie chicken, chopped broccoli & quinoa. Mix until incorporated in the dish, in an even layer. Then pour the cheese sauce on the top. Spread evenly. Then add the remaining shredded cheese on top.
- Whip out the pan you used to make cheese sauce in and heat the 2 tbsp of butter on medium heat. Once melted add the gluten free breadcrumbs, cook occasionally tossing until toasted.
- Add toasted bread crumbs on top and cover with aluminum foil. Bake at 20 minutes covered, 10 minutes uncovered & 5 minutes on broil or until it starts to brown. Then enjoy!

Large Frying Skillet– my favorite non stick pan that works wonders with the cheese sauce
Cheese Grater— this is one of my all time favorite cheese graters so that it catches all of the shredded cheese & it is easy to shred!
Hand Whisker– You can use a spatula, however using a whisk is a lot easier when making sure the cheese sauce is incorporated

Do I need to use gluten free ingredients for the Gluten Free Broccoli Chicken Cheese Casserole?
No you do not need to use gluten free ingredients. You can use all purpose flour in replace of the tapioca flour. Then you can use regular bread crumbs as well.
What is the best way to store the Gluten Free Broccoli Chicken Cheese Casserole?
You can store this casserole in an air tight container for 5 days in the fridge. To reheat, add to an oven safe dish & heat at 350 degrees for 20 minutes covered, then take aluminum foil off and cook until heated through about 5-10 more minutes
Can I use another combination of cheese besides Havarti & Cheddar?
You can use your favorite cheeses! However, the mix of havarti and cheddar is the perfect sharp & creamy mixture needed to pair with the rest of the ingredients
Are you able to use cauliflower in this recipe instead of broccoli?
I have not made it with cauliflower yet, if you do please let me know! I would recommend using raw, because frozen would release too much liquid.
Can I use rice instead of quinoa in the Gluten Free Broccoli Chicken Cheese Casserole?
Sure can! Use one cup of rice that you’d like. Except frozen cauliflower rice, would release too much liquid.
