They have such an easy chicken marinade that makes the tastiest baked chicken. As well as a simple cucumber salad to add on top. Wrap these Easy Sheet Pan Chicken Gyros up in pita bread or feel free to make a chicken gyro bowl without the pita. It is up to you, but however you put it together, you will love it!
What Simple Ingredients are Needed for the Easy Sheet Pan Chicken Gyros Marinade?
Easy Sheet Pan Chicken Gyros Marinade
- 1 1/2- 2 lbs Boneless Skinless Chicken Thighs
- 4 tbsp greek yogurt
- 3 tbsp lemon juice
- 2 tsp honey
- 1 tbsp ground mustard
- 4 cloves garlic
- 2 tsp salt
- 2 tsp dried basil
- 1 tsp onion powder
- 1/2 tsp pepper
- Place the Boneless Skinless Chicken Thighs in baking dish. In a small bowl add salt, dried basil, onion powder & pepper. Whisk together until fully incorporated
- Sprinkle the seasoning generously on both sides of all the chicken thighs
- Then in a medium size bowl add Greek Yogurt, lemon juice, honey, ground mustard, & 4 garlic cloves minced. Whisk until fully combined
- Pour over the chicken thighs & toss them in the sauce until both sides are covered. Cover the baking dish with saran wrap & refrigerate to marinate for 30 minutes before baking.
Where Did Gyros Originate From
Gyros originated in Greece in 1922. After WW2 the gyro started to travel, because of the immigration pattern of the Greeks. It is said that gyros are one of the “first world fast foods.” Gyro comes from the word “GHEE-ROO” which comes from the greek word “gheereezo” meaning to turn. Gyro meat is traditionally stacked high, continuing to turn, and then can slice thin slices off of it. The most typical meat used for a Gyro is lamb, pork or beef. Nowadays though even chicken & fish are widely used!
Then the meat is traditionally topped with onions, tomatoes, lettuce, fried potatoes & tzatziki sauce. I cannot wait to try one with fried potatoes one day! This recipe we are keeping it simple with the toppings, but don’t you worry, there is plenty of tzatziki sauce on it 🙂

- Original hummus
- Tzatziki sauce
- Feta cheese
- 1 large cucumber
- 10 cherry tomatoes
- 1/4 red onion
- 1/2 tsp salt
In a small bowl, add in diced up red onion, cherry tomatoes, and cucumber. Then you will sprinkle with salt, toss & refrigerate until ready to serve.

What Tools/Items Do We Need To Make Easy Sheet Pan Chicken Gyros
Sheet Pan: The sheet pan used for this recipe needs to be a half sheet lipped one so that the juices do not leak. Line the sheet pan with aluminum foil for such an easy clean up!
Lemon Squeezer: Which ever works best for you– but recommend getting one to make it easier to measure out the lemon juice
Hummus: I use store bought hummus, because it makes life so much easier for this recipe. Therefore, I just recommend you get a traditional hummus that is your favorite. I love the organic Trader Joe’s original hummus!
Tzatziki: The same goes for the Tzatziki sauce too. You can for sure make your own, however it makes it a lot easier t pick up a brand you trust! My favorite store bought Tzatziki sauce is Cedars– linked here!
Pita Bread: Whatever pita bread you want as well– however, I do recommend looking to make sure it is one with no enriched flour in it.
Kitchen String: I like to have this on hand, so I can tie the gyros together when I serve them!

You do not want to keep chicken in the fridge for more than 5 days.
Do I have to bake the chicken on the sheet pan or can I grill it?
You don’t have to bake it, you can for sure grill when it is nicer outside! Great question!

- Favorite Tizatziki of choice
- 1 large cucumber
- 10 cherry tomatoes

- 1 4 oz Container Feta Cheese
- 6-8 pita breads
Instructions
- Place the Boneless Skinless Chicken Thighs in baking dish. In a small bowl add salt, dried basil, onion powder & pepper. Whisk together until fully incorporated
- Sprinkle the seasoning generously on both sides of all the chicken thighs
- Then in a medium size bowl add Greek Yogurt, lemon juice, honey, ground mustard, & 4 garlic cloves minced. Whisk until fully combined
- Pour over the chicken thighs & toss them in the sauce until both sides are covered. Cover the baking dish with saran wrap & refrigerate to marinate for 30 minutes before baking.
- While the chicken is marinating, in a small bowl, add in diced up red onion, cherry tomatoes, and cucumber. Then you will sprinkle with salt, toss & refrigerate until ready to serve.
- Preheat the oven to 400 degrees. After the chicken has marinated, line your half sheet baking sheet with aluminum foil & place the chicken thighs on top.
- Bake you chicken thighs until cooked through. The juices will run clear, and an instant-read thermometer inserted into the middle of the largest thigh will read 165ºF. In my oven, this takes about 30- 35 minutes. Every oven is different, so I’d say check at 30 minutes.
- Then lastly you will start layering your gyro! I always do hummus first, then chicken sliced, cucumber tomato mixture, tzatziki & feta! Enjoy!
