The Secret to Baking This Easy Oven Baked Chicken Alfredo to Perfection
You will need to cut the chicken breast in half. Not length wise, but cut horizontally along the width so you have 2 pieces of the chicken breast now thinner.
So as you can see from above, you cut the chicken along the width of the breast so you have 2 nice and still thick pieces, but for each chicken breast you will have 2 pieces now.
Pro Tip: Having them slightly frozen, help with cutting them perfectly. They don’t have to be. But if you have chicken breasts in the freezer take out 2 days before you plan to make it. By day 2 it should be nice and thawed, but a bit frozen still making it easier to cut. However– not necessary!
Now you will have 8 pieces ready to go

Easy Oven Baked Chicken Parmesan Alfredo
Equipment
- Baking sheet ( Highly recommend a baking sheet with cooking rack on it like I linked above)
Ingredients
- 4 large chicken breasts
- 1 cup gluten free or regular bread crumbs
- 1 cup shredded parmesan cheese
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp paprika
- 15 oz Favorite Alredo Sauce (we love Rao's) you will not use the whole jar. The nurtion facts include the tbsp for each breast
- 12 oz Shredded Mozzarella you won't use the whole bag, unless you want to! I use about 1-2 oz for each chicken breast. So you may use as much as you want
Instructions
- Preheat oven at 400 degrees. In a large bowl add in the seasonsings ( onion powder, garlic powder, salt, oregano and paprkia) as well as the bread crumbs and parmesan. Then whisk together with a fork.
- Cut each of the chicken breasts horizontally along the width of the breast to create 2 thin pieces of the chicken breasts. Repeat for all 4 large chicken breasts. Now you will have 8 chicken breast cutlets ready to go!( Also known as butterflying your chicken breasts)
- Then toss each chicken breast piece in the seasoning, bread crumb and parmesan until each side is well coated and add to baking sheet rack or baking sheet lined with parchment paper. Using the baking sheet rack insures it gets crispy on both sides. If you don't have one, you can also get a baking sheet, line it with alminum foil and place a cooling rack ontop, that way it is raised off your baking sheet!
- Bake for 20 minutes at 400 degrees. Then take out and pour 1 tbsp of alfredo on top and sprinkle with mozzarella ontop. Place back in oven and place on high broil for 5 minutes. Then dig in!

I made this the other night with a red sauce instead of the alfredo sauce and it was a huge hit for whole fam (kids included)! I wouldn’t have thought to bake the chicken on a rack over a baking sheet either. I think it helped make sure the chicken wasn’t too dry. Definitely will make again!
