Taco Nights are for sure thing in our household weekly or bi-weekly! They are just so easy, convenient and a meal you can doctor up so that the whole family will enjoy it. After Taco Night we usually always have leftovers and as a busy mom I am always looking to have 1 meal, work for 2 meals for the week. Sure taco salads are great or tacos/burritos again, but here is our favorite way to doctor up taco night leftovers. If you have any taco meat leftover these Easy Mini Taco Cups are going to be your go to.
Easy, perfect for lunches, and perfectly individualized for easy serving. Therefore makes it perfect for get togethers, or party appetizers as well. All and all this is going to be your go to taco recipe. Also don’t feel like this recipe has to be for leftovers. You can make the taco meat and make them right into these Easy Mini Taco Cups (which we have for sure done before!).

Ingredient for the Easy Mini Taco Cups
2 cups of Taco Meat
1 can of refried beans
4 oz cream cheese
wonton wrappers (24 count)
1 8oz package shredded cheese
optional
shredded lettuce
black olives
tomatoes
How to make the Easy Mini Taco Cups
This recipe is for 12 of the Easy Mini Taco Cups, but feel free if you have more meat, doubling this recipe! You will have enough of the refried beans and cream cheese to do so. Then you can always freeze to reheat later as well!
Directions:
Start by greasing your 12 cup muffin tin. Then place a wonton wrapper in the center of each muffin tin cup & carefully push it down to form a cup inside the muffin cup.
Then place 1 tsp of refried beans in the center of the wonton wrapper, then 1/2 tsp of cream cheese on top of the refried beans.
Next take a second wonton wrapper and place directly over the first one. Then you will carefully pinch the center around the refried beans & cream cheese so it creates a little pillow. Now the second wonton wrapper has created a second layer and is stuck to the mixture.
After place 1-2 tbsp of taco meat on top of the second layer. sprinkle with cheese. Then place in the oven at 375 for 10-15 minutes until nice and gold brown. Place on broil for a few minutes if you are wanting it to be extra crispy on top.
Then top with shredded lettuce, sliced black olives, tomatoes — whatever your heart desires and enjoy!

When Should I Make These Easy Mini Taco Cups?
One of the things I love about these taco cups is that you can make these for these for any meal (Besides maybe breakfast.. but wouldn’t judge! hahah) as well as appetizers! They make for a great recipe to grab and fill up on as a meal, or good amount in individual ones to tide you over during a get together. You do not have to use leftover taco meat to make these easy taco cups! It just is a great way to use that leftover meat & takes under 10 minutes to get dinner in the oven. However these are also great with taco meat you make right away! Whatever way you choose to make them, you will love them!
Can you use tortillas instead of wonton wrappers for these Easy Mini Taco Cups?
I have never used tortillas before, I feel like they would need to be pretty thin tortillas in order to have them stick together, not the thick mission tortillas.
Are you able to use ground chicken instead of ground beef rot these mini tacos?
Yes! When you make your taco meat, use ground chicken or ground beef– is delicious with both!
What is the best way to store the Easy Mini Taco Cups?
You should not eat your taco meat if it has been sitting around for more than 5 days. So make them before that 5 day mark & store them in the fridge until that time limit.
Can you freeze the Easy Mini Taco Cups?
Sure can! Take out the day before. Then you can reheat at 300 degrees in the oven for 15-20 minutes check in center all ovens differ, then broil for a few minutes to get that crisp back after the freezer.
