We have decided that we could eat this recipe every week hands down and not get tired of it. This Easy Mexican Grilled Chicken is no joke: Easy, Delicious, Clean and Family Favorite! Also the avocado corn salsa that goes on top is so stinking good on top of the chicken, but also I love to just eat it as a dip as well. This recipe is going to be perfect for our patio nights ahead of us this Spring and Summer, not to mention just in time for Cinco De Mayo. Now let’s get started shall we?
The Simple Ingredients For Easy Mexican Grilled Chicken
- 4 chicken breasts butterflied
- 1 packet of Southwest Taco Seasoning ( I love using Simply Organic seasoning)
- 3 limes
- 3/4 cup spicy black beans drained and rinsed
- 1/2 cup corn
- 1/4 cup red onion chopped finely
- 1/4 cup cilantro chopped
- 1 clove garlic minced
- 1 jalapeño deseeded and chopped finely
- 2 roma tomatoes chopped
- 1 avocado chopped
- 4 tbsp cotija cheese
How Easy Is This EASY Grilled Mexican Chicken?
One thing that really cuts down time on this recipe is using a Mexican seasoning. I personally love using any of the Simply Organic Seasoning, because they have ingredients I trust. A lot of seasonings actually DYE their seasoning to enrich the colors. Therefore, I always look into getting organic seasonings from brands I trust.
Directions for Easy Grilled Mexican Chicken:
- In a medium mixing bowl add in finely chopped onion, jalapeño deseeded, minced garlic, chopped Roma tomatoes and mix together. Then add in black beans, corn, avocado, cilantro and cotija. Mix together until combined again.
- Next squeeze the 3 limes over the ingredients above, toss until throughly coating ingredients. Refrigerate until dinner is ready ( I highly recommend you refrigerate for 30 to 2 hours)
3. Then Butterfly your chicken breasts and place on a sheet pan and sprinkle Southwest Taco seasoning on the fronts and backs of the butterflied chicken. Then pinch of salt and pepper on each side as well.
4. Heat grill to medium heat, let the grill heat for about 10 to 15 minutes. Then add the butterflied chicken breasts ( cutlets) onto the grill. Grilling each side for 3 minutes until golden browned and just cooked through.
5. Take off the grill, top with the Avocado Corn salsa and you have such a winner!

Ingredients

- 1 packet of Southwest Taco Seasoning I love using Simply Organic seasoning
- 4 limes 1/4 cup juice
- 3/4 cup spicy black beans drained and rinsed
- 1/2 cup corn

- 1/4 cup cilantro chopped

- Place chicken breasts in baking dish.Squeeze 1 lime over each side of the chicken breasts. Sprinkle salt & pepper on each Sid was well. Then sprinkle Southwest Taco seasoning on the fronts and backs of the chicken. Cover and let marinade while the salsa is marinating.
- Heat grill to medium heat, let the grill heat for about 10 to 15 minutes. Then add the chicken breasts onto the grill. Grilling each side for 5 to 6 minutes per side, depending on thickness and until golden browned and just cooked through.
- Take off the grill, pour your favorite queso on top and then top with the Avocado Corn salsa and you have such a winner!
