What is the KEY to this Easy Low Carb Fruit Pizza: Kodiak Cakes Carb Conscious Mix
In this delicious recipe we are working with the DELICIOUS Kodiak Cakes Carb Conscious mix. A mix of regular flour & gluten free flour. Since it is a mix of regular flour & gluten free throw it throws the balance of a traditional fruit pie crust off. So finding the right balance of ingredients when the Carb Conscious mix already has certain ingredients in it took a little bit. Soooooo fast forward 5 tries later to ensure that the crust is not too dry, has the right consistency, right balance between sweet– but not too sweet….. I finally GOT IT! So it was the biggest celebration moment. hahaha yes we try these recipes until they are perfect, even if it means 5 times!
How to meal prep these for breakfast meal prep
Let’s just say my family was obsessed and Ainsley cannot get enough for breakfast. The recipe is super simple, low carb, DELISH, perfect for meal prep. I use a large mouth mason jar to cut circles into the Low Carb Fruit Pizza Crust, then place those in an air tight container. When you are wanting to eat them days later, you don’t want the Greek Yogurt layer on top of the crust– that will cause it to get soggy in the fridge.
Next day you will have the crust ready, top with the Greek Yogurt layer, fruit you want and bam! Delicious & healthy!

What Ingredients Do I Need For This Easy Low Carb Fruit Pizza
Fruit Pizza Crust
- 1 cup Kodiak Cake Carb Conscious Mix
- 2 eggs
- 1 stick unsalted butter ( room temperature)
- ½ cup Monk Fruit Sweetener
- 4 tbsp cream cheese
- 1 ½ tsp Vanilla Extract
Fruit Pizza Topping
- 1 cup greek yogurt
- ¼-⅓ Monk Fruit Sweeter
- Low Carb Fruit of Choice
How Do We Make This Easy Low Carb Fruit Pizza
Fruit Pizza Crust ( preheat oven to 350 degrees)
- In a large mixing bowl add in 1 stick of unsalted butter brought to room temperature, ½ cup Monk Fruit Sweetener and 4 tbsp cream cheese
- Using your hand mixer, mix for 1 minute, until the mixture starts to combine well, then add in the 2 eggs, continue to mix for another 2 minutes, which should bring it to a nice smooth consistency.
- Add in 1 cup of Kodiak Cake Carb Conscious Mix and fold in until combined with spatula
- On a baking sheet, place parchment paper and spray very lightly with cooking spray before pour batter on sheet
- Pour fruit pizza crust onto sheet and smooth out into a circular pizza crust with spatula
- Place in oven at 350 degrees for 15 minutes, then transfer parchment paper sheet with crust on it to a cutting board to cool
- Wait until the crust is fully cooled before adding Fruit Pizza toppings. Or take a wide mouth mason jar and cut circles out of the crust to meal prep easy Low Carb Fruit Pizzas for healthy breakfast or healthy dessert.
- Don’t top with fruit pizza topping unless you are eating that day in order to prevent it from getting soggy.
- When ready to eat top with your fruit pizza toppings and enjoy!
