Sheet Pans have to be one of my all time favorite things to put together– especially ones that can be for Breakfast, Lunch and Dinner! I mean does it really get better than that?! ( answer is… no!) I love making this sheet pan as a meal prep over the weekend. Then dividing into 6 containers, then reheat and top with eggs in the morning, or for lunch or for dinner! Also would be great without eggs too– seriously you cannot go wrong with this. Easy Irish Bacon Sheet Pan is going to be your new go to recipe, not just for St. Patrick’s Day, but for every week!
Now how is Irish Bacon different than regular bacon?
Irish bacon is different because of the cut of the meat. Regular bacon comes from the underbelly of the pig, whereas Irish Bacon is from the back of the pig. Usually cut in rounder and does not get as crispy. Therefore, you want to make sure when cooking it in this recipe you do not over cook it. Especially when you will be reheating for meals in the week.

I had never had Irish Bacon, until Wellshire Farms and I decided we needed to use it to create a St.Patrick’s Day recipe! No joke…. we are VERY obsessed with it. It is a mix between regular bacon and ham in my opinion. It is a must have!

What Delicious Ingredients Will You Need?
- 1 package Wellshire Irish Bacon
- 2 lbs red potatoes
- 1/2 green cabbage
- Salt
- Ground Mustard
- Pepper
- Coriander
- Cayenne Pepper
- 3 tbsp olive oil
All About LAYERING to Make the PERFECT Irish Bacon Sheet Pan
First Layer:
You will dice your potatoes into bite sized pieces first, then drizzle 2 tbsp of olive oil on top. Sprinkle with salt, ground mustard, pepper and coriander, toss in your seasoning mixture. Layer your full sheet pan with parchment paper, then spread potatoes onto sheet pan. Bake at 425 for the first 30 minutes.
Second Layer:
While the potatoes are baking, you will chop up 1/2 a green cabbage into bite sized pieces as well. Toss with 1 tbsp olive oil and then season with paprika, salt, pepper and ground mustard. Take potato sheet pan out of the oven and now spread cabbage over the sheet pan. Turn oven down to 400 degrees. Bake for 15 more minutes.
Third Layer:
After the cabbage and potatoes bake 15 more minutes at 400 degrees, you will turn down your oven once more to 375. Then slice up your Irish Bacon into strips or bite sized pieces, depends on your preference. Then bake for 12 minutes NO MORE. You do not want to leave your bacon in there longer, because if you do it will dry out.
Fourth Layer:
Once your sheet pan layers are done, then last layer is to add egg on top! Fix eggs to your liking and top your Easy Irish Bacon Sheet Pan.

Can I use other bacon for this sheet pan recipe besides Irish Bacon?
Yes! I would recommend this bacon the Maple Bourbon Bacon by Wellshire’s is one of my all time favorites! You will just need to adjust the baking time per bacon instructions
If I am using leftover ham, how long would I cook it?
When you would add the Irish bacon in this recipe, add the diced up leftover ham. Then bake at 375 for 10 minutes.
Is there a way to eat this without eggs?
You absolutely can eat this without eggs! I eat this for breakfast, lunches or dinner! Therefore, sometimes I just reheat with the potatoes, cabbage and bacon— perfect hearty and healthy combination.
Would sweet potatoes or other kinds of potatoes work for this recipe?
I have never done sweet potatoes with this recipe, but I don’t see why not! That sounds wonderful!
How is the best way to store this sheet pan?
I love to divide it into 6 air tight containers ( normally 4 though, because we can’t NOT eat it after making it haha) then refrigerate for the week– up to 5 days. Then take out and microwave or add to skillet to reheat the next day. Cook eggs to your liking to put on top and you have your self a winner!
Is there a certain order to bake the Easy Irish Bacon Sheet Pan?
Yes there is! That way you can make sure that everything on the pan cooks perfectly and you end at the same time with everything cooked the way you love it! I go into more detail about the order of the how to bake your sheet pan above! (or see the video below!)
Easy Irish Bacon Sheet Pan

- full sheet pan
- parchment paper
Ingredients
- 1 package Wellshire Irish Bacon
