I feel like we all need a delicious chicken noodle soup that we can turn to! For the sick days where you or a family member need something to give you those cozy vibes! Now, normally we may need to get the stock pot out and go to great lengths to get chicken noodle on the table. However, who wants to do that when you are taking care of a sick loved one? Not to mention, if YOU are the sick one yourself? That is where the Instant Pot comes in to be hero with this healthy Chicken Noodle Soup!
Now I don’t just make this soup when I don’t feel good, I mean it is hearty, healthy and super nutritious for us…. not to mention SO tasty!
Is it a “Myth” that Chicken Noodle Soup can help treat a cold?
It actually isn’t a myth or a joke— it is the full blown truth! The delicious carrots, onions and celery that is found in chicken noodle soup are wonderful sources of Vitamin C & K. The other ingredients are all packed with anitoixadants and minerals that help support your immune system when fighting off viruses in the body. It then helps the body recover from illness more quickly.
I am such a believer that food can be the best of medicines. So now you can see why it is more apparent for you to have this recipe! So let’s get to this easy recipe!

Can you make this recipe in the Crockpot?
Yes! One of you actually already made it in the Crockpot and said that it would perfectly making it like normal. Not worrying about sautรฉing the veggies, but then cook on high for 4 hours.
Would this recipe work with leftover cooked chicken or leftover Thanksgiving turkey?
Absolutely! Make the soup as normal, but without putting the chicken or turkey in. Add in the chopped turkey or chicken when you add in the lemon juice and half & half. Stir occasionally for 2 minutes warming up the chicken or turkey and you are good to go.
If I am gluten free, would gluten free noodles work?
Yes! Use whatever noodles you are anting to use. Some have used whole wheat, gluten free or egg noodles.
Simple Instant Pot Chicken Noodle Soup
Equipment
- Instant Pot
Ingredients
- 2 large chicken breasts chopped into 1 inch pieces
- 8 oz spaghetti noodles
- 1 1/2 cup chopped celery
- 3 carrots chopped
- 3 cloves garlic
- 1/2 yellow onion chopped
- 3 tbsp lemon juice ( about 1 lemon)
- 2 tsp dried thyme
- 1 tsp dried oregano
- 6 cups chicken broth
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- 1/4 tsp tumeric
- 1/8 tsp cayenne pepper
- 2 tbsp garlic ghee or unsalted butter
- 1/2 cup half and half
Instructions
- In Instant Pot add the 2 tbsp garlic ghee and press saute. Add in the onions and garlic. Saute for 3 minutes.
- Next add in the carrots and celery. Continue to have the Instant Pot on saute. Continue to stir with spatula so it does not stick. Add in 1 tsp of thyme, 1/2 tsp of oregano and 1/2 tsp salt. Saute for 4 minutes.
- Then add in the chopped chicken breast, mix until throughly combined and saute for another 4 minutes. Add in the remaining seasoning : 1 tsp parsley, 1 tsp thyme, 1 tsp salt, 1/2 tsp oregano, 1/2 tsp pepper, 1/2 tsp garlic powder, 1/4 tsp paprika, 1/4 tsp tumeric and 1/8 tsp cayenne. Mix until combined and make sure nothing is sticking on the bottom of the Instant Pot.
- Pour in the 6 cups chicken broth and break the spagheti noodles in half and place on top and press into the broth. Secure Instant Pot lid and lock the pressure release valve. Turn on High Pressure for 10 minutes. Once the 10 minutes are up it will beep and dispaly LO 00. Then let it Naturally relrease for 8 minutes. It will read LO 08. Then quick release, and take lid off when float valve drops.
- After the float valve drops and you have taken lid off, gradually pour in the Half and Half, stirring after each pour, then pour in the 3 tbsp lemon juice, stir in. Let sit, stirring occasionally for 2 minutes. Then pour into bowls and serve with crispy bread or large salad!
If using already cooked chicken or turkey
- Do not put the chicken in at the beginning. You will end up putting it in on the LAST step from above. Once you quick release and take the lid off, you will pour in the Haflf & Half, lemon juice and then the chopped chicken or turkey. Continue to stir to heat up the chicken and the serve!

Can you opt out the half and half for non dairy people? Or should I substitute with soy alternative?

I am not sure, I have not tried that yet. I know you can opt out of the half and half, but I wonder how a substitute would do! Now, you add it in AFTER you are done pressure cooking it, so you are just stirring it in gradually. I feel that would be safe! Let me know if you try it with a substitute!

Loved this recipe! I made a few changes… I don’t have an Instant Pot, so I went with the crockpot for a slow cooker soup. I made it as you typically would, starting with the raw chicken at the bottom and the ingredients on top mixing throughout. I didn’t sautรฉ the veggies because I was being lazy, but I’m sure it would have been delish. I also had egg noodles at home, so threw those in at the very end vs. the spaghetti noodles. The lemon, turmeric and YASSS half & half made this recipe for us. So, so good – especially on a chilly night!

This is satisfying and delicious! My husband was craving soup on one of our first cold days of fall and I wanted something chicken-based to use up a carcass I had in the fridge. Made my own stock in the IP, then used that for the soup base. I usually play with the seasonings in most recipes, but made this exactly as written and it was very well seasoned and balanced. Hi!! I am so sorry I have never doubled it before, I cannot imagine the timing being much different because the chicken is already pretty much cooked, the noodles will have more broth with it which should keep time same! It just might come to pressure later which will help even out the time. Let me know!!
