Mark my words ladies and gentleman, might as well hit the Pinterest pin on this one & print it out as well, because you will be making it over and over! I know I may sound like I am tooting my own horn on this recipe but….. okay I am! However, I had the reviews from family and friends who are my valid test tasters to back it up. They do not shy away from being honest about my recipes, which I very much need right? I have also been coined “Guacamole Queen” — so dreams do really come true. Also in other words, the guacamole in this recipe is perfection. There I go again tooting my own horn, but clearly I am obsessed with these Easy Grilled Shrimp Guacamole Bites. Alright, I will stop this train and get to the recipe for you all! 🙂
What Delicious Ingredients Do We Need For Our Easy Grilled Shrimp Guacamole Bites
Grilled Shrimp Ingredients:
- 1 1/2 lbs peeled/deveined and tail off shrimp ( about 30 shrimp)
- 3 tbsp fresh lime juice (about 3 limes)
- 2 garlic cloves minced
- 3/4 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp cumin powder
The Best Homemade Guacamole
- 6 large ripe avocados
- 1 large garlic clove minced
- 1/2 jalapeño pepper deseeded and diced FINELY
- 1/3 cup favorite salsa ( I prefer chunky mild salsa in this recipe)
- 3 tbsp fresh lime juice (about 3 limes)
- 1 TBSP red onion diced FINELY
- 1 tsp salt (adjust to taste if need be)
Grilled Shrimp Directions:
Start preheating your grill to 375- 450 degrees.
- In a 9 inch square baking dish add your raw shrimp and drizzle the lime juice on top. Sprinkle the minced garlic cloves over it as well. With your hands mix the lime juice and minced garlic evenly on your shrimp.
- Wash your hands and then sprinkle the chili powder, salt and cumin powder on top of the shrimp. With your hands mix the seasoning evenly on your shrimp as well.
- You will be directly cooking the shrimp on the grill on the medium heat for 5 to 7 minutes. Turn your shrimp half way through the grilling process. The shrimp should be a nice pint color and the meat should be white and opaque. They should make a nice C shape, if they are curled all the way in to more of an O shape they have been a bit overcooked. So keep a look out for that nice C shape.
- Transfer to a plate and cover with aluminum foil while you assemble the rest of your bites.
The Best Guacamole Directions:
- In a large mixing bowl add your finely diced jalapeño, finely diced red onion and minced garlic. Then cut into your avocados, remove the seed and scoop out the insides for all 6 avocados. Then pour the lime juice, salsa and salt over them.
- Take a fork or a banana masher and mash your avocados until it is the consistency you prefer for guacamole. Take a spatula and fold in your guacamole a few times to get it fully incorporated
- Cover with press and seal. Then refrigerate while you’re grilling your shrimp or before you are ready to serve!
Assembly the Easy Grilled Shrimp Guacamole Bites
Take a Tostitos Scoops chip ( want them to be the bowl shape for the best presentation) can always use cucumber slice for low carb option
Add about a 1 1/2 tsp of The Best Homemade Guacamole in the center
Place 1 of your delicious grilled shrimp on top of the guacamole and then repeat for each one. Next… DEVOUR! 🙂
Questions when making Easy Grilled Shrimp Guacamole Bites
Can I make this recipe ahead of time?
You could make the guacamole a few hours a head of time. I wouldn’t recommend making the shrimp ahead of time, because you want them to be as fresh as possible over the bites. I will make them and then transfer to a plate with aluminum foil to keep them warm within the hour of serving.
Do I have to use the Tostitos Scoops for this recipe?
Yes you can also use cucumber sliced rounds if you would like a lower carb option or you could use other tortilla chips– however the scoops present and work better.
Am I able to pan fry the shrimp instead of grill?
You are able to pan fry them. I think the grilling flavor for the shrimp takes it to the next level and cuts through the guacamole so you really get both tastes that pair so well together. However, I have tested them on a frying pan too just in case 🙂 Spray frying pan with olive oil, turn to medium heat. Let frying pan heat, then add marinated shrimp to pan. Cook for 2 minutes on first side and 1 to 2 minutes on the second side. They are done with the shrimp is pink and the meat is white/opaque. They should be making a nice C shape.
What is the best way to store this appetizer?
Leftover guacamole store in an air tight container with on of the guacamole seeds in it to preserve freshness.
If I don’t like red onions, can I take that out of the guacamole?
Sure!
Is there a way to make this recipe lower carb?
